Recipe Ingredients for Eat Any Time Vegetable Soup

2 cups onions, chopped
1 1/2 cups celery, chopped
2 cups carrots, chopped
1 1/2 cups leeks, chopped
1 1/2 tablespoons garlic
14 ounces tomatoes, diced
2 cups fresh green beans, cut in thirds
2 quarts low sodium chicken stock
3 cups cabbage, roughly chopped
1/2 tablespoon sea salt
1/2 tablespoon oregano
1/4 teaspoon crushed red pepper
3 tablespoons olive oil

Recipe Directions for Eat Any Time Vegetable Soup

  1. In a cast iron dutch oven sauté onions, leeks and garlic in olive oil.

  2. add carrots, celery, salt, pepper, crushed pepper, oregano and bay leaf and stir

  3. add chicken stock and tomatoes and stir

  4. bring to a boil

  5. lower heat and let simmer 20 minutes,

  6. add green beans and stir

  7. let simmer 20 minutes

  8. add cabbage

  9. let simmer 10 minutes and turn off heat
