What do you eat for breakfast?

What do you fellow veggies out there eat for breakfast that is higher in protein/keeps you going for a while? I'm waking up earlier in the mornings, so I have the time to prepare a little something. :)

I'm looking for a higher protein cereal, without nuts, and preferably with fewer calories. Any suggestions or favorites?

Basically a vegetarian breakfast gush thread. XD

I'm not really vegeterian, but my breakfast is so...

I eat about 3 mandarin oranges and a banana for breakfast.
i have a serving of cereal like honey nut cherrios and a grapefruit :D

I usually eat the grapefruit before i leave home, and the cherrios or other cereal throughout the morning....that one serving can last me all morning and two bottles of water if i really want it to :D
Every morning I have a bowl of plain oatmeal and two pieces of fruit. I love oatmeal and it fills me up for quite a while!
This is interesting because I will usually have a bowl of Scottish oatmeal with chopped apple and a glass of skim milk (i'm not vegan), but today I had a bowl of cold cereal with blueberries and was feeling faint around lunchtime. (my class schedule prevents me from having a midmorning snack).

Scotch oatmeal has lots of protein and fiber, the apple has fiber, and the milk has 8g protein.
"chicken's menstration" is a little vulgar don't you think? I mean, it's perfectly okay to not eat eggs, but couldn't you be a bit more tasteful?

And I agree, they treat chickens terribly. I can't wait to have a job so I can buy free range. At the moment I still live with my mom and she doesn't have the extra cash to be buying organic this and free range that.

As for breakfast: I eat things with cheese. I'm hoping to look for free range dairy products when I have the money, too. There's this great organic foods store a mile from my house.

If you're vegan, I suggest nuts. I find them very filling. And banana. I'm not much of  breakfast person though.  I don't like a lot of heavy food in the morning. I eat later in the day, and it's usually a Nutrigrain bar or peanutbutter and jelly. Or soup.

I'm not a vegetarian although i'm not a meat fiend either.  I'm a whole grain kind of girl.  I usually mix it up everyday so i don't get bored. 

egg mcmuffin - whole grain english muffin, one poached egg in microwave, and one tbsp. cheese whiz or .5 ounce fav cheese

yogurt and kashi go lean cereal or all bran cereal (it's crap in milk but gold in yogurt) with 1 tbsp. flax

one slice whole wheat bread with 1 tbsp. peanut butter and 1/2 banana

oatmeal/cracked wheat (1c. cooked) with any of the following flavour combinations

  • 1 tbsp. peanut butter and some banana and sweetener to taste (sounds gross but it's delicious grool!)
  • 1 tbsp. peanut butter and 1 tbsp. low cal jam for sweetener
  • 1/2 apple, cinnamon, sweetener, and 1-2 tbsp. toasted walnuts
  • dried fruit is also super good in oatmal, as is toasted wheat germ
smoothies are always good too - banana and chocolate soy milk (1/2 cup) with ice is really nice before a morning workout

whole wheat pancakes with berry compote (just defrost some frozen unsweetened berries in a sauce pan.  Add some fresh squeezed orange juice and the zest too if you're feeling frisky.  Thicken it up with some cornstarch.  oh yeah, mix the cornstarch with cold water or juice beforehand or you'll have a lumpy mess).  Add some sugar or sweetener to taste.

omlettes are good too.  you can put leftover veggies in there if you have any hanging around.

bowl of leftover rice/quinoa/bulgur/millet with salsa and some toasted seeds/nuts

I could go on forever but i'm going to stop now.

My favorite breakfast is this:

Take a piece of bread (or one of my breakfast patties, [see the recipe forums]), put it in a greased pan.  Flip when browned.
Pour scrambled egg or liquid egg whites over top.  Cook, and flip.

Put on plate and pour salsa over it.  Sprinkle salt & pepper.

Sooo good w/ a cuppa joe in the morn.
I eat Steel Cut Oats with ground flax seed and blueberries.  Sometimes I add a couple dried figs.  
I usually have hot oat bran with a splash of light soymilk and fruit. If I need something that will stay with me longer, though, a slice of good wholegrain toast spread with tahini is great. Try Yoga Bread from The Baker if it's available in your area. It's got cranberries, pumpkin seeds, flax, & more. Delicious.
Sprouted bread (sometimes toasted, which I guess is an oxymoron of some sort) and fresh fruit or a smoothie with flaxseed
Normally I have ready oats made with skimmed milk, mixed dry fruit thrown on top.. With 1 scoop protein powder thrown in (although thinking of upping that to 2 scoops because still not getting enough protein).

Trying this on sunday
1 piece of thick multigrain and wholmeal bread
1 banana, cut in half - 1/2 nuked into "jam" or paste, 1/2 in slices

Toast bread, smear on "jam" place on pieces. Can top with wheat germ or bran for crunch.
Will serve with a small container of oats mixed with peanut butter, and will be having yogurt and berries. All under 350 cal. :):)
my daily three minute to prepare breakfast is this:

1 fruit such as apple or pear chopped into 1/2 inch dice
put this in a bowl and top with 1/2 cup quick (not instant) oatmeal.
As I like thick oatmeal, I top with 3/4 cup of water.

Zap in the micro for 3 minutes or maybe less.  I have an ancient low wattage machine.

poof- breakfast.  Filling for 4 hours usually and actually healthy.


THIS IS EASY! but not suitable for vegans!

my breakfast this morning:

1 toasted Thomas' light whole wheat english muffin [contains dairy]
100 calories, 1g fat, 8g fiber, 7g protein
1 morningstar farms sausage patty
80 calories, 3g fat, 1g fiber, 10g protein
2-3 tbsp liquid egg whites
[roughly] 30 calories, 3g protein
pink lady apple
70 calories, 2g fiber

altogether that's just 280 calories, 4 grams of fat, 11g fiber, 20g protein! it's satisfying and keeps me full for a few hours.  you may even want to add something else to up the calories a little since it has been speculated that eating a larger breakfast will help boost your metabolism and of course keep you full longer.  Smart Balance makes a light margarine-like spread with no hydrogenated oils/trans fats and they've added flax to it, i use that sometimes.  maybe put a smear on the english muffin or something.

also i make 6 at a time and put them in the freezer [one down to thaw the night prior to eating it] so i can grab it and heat it up at work, where i toast the muffin separately and zap the egg and "sausage" patty side by side for a minute in the microwave, then slap it all together and enjoy!
Creature of habit here.  I have oatmeal almost every morning for breakfast.  Somtimes steel cut oatmeal, depending on how I'm doing for time.  I mix up the toppings a bit though.  Sometimes, I add raisins, sometimes blueberries, this morning I added raspberries... occasionally, I'll chop up some pecans and toss them in there or some peanut butter.

I just LOVE my oatmeal.  Seems like the day can't start off right without it or without my coffee!!
If I'm on the go, I will grab a Luna Bar for the road, which usually keeps me full for a few hours til I have a snack. Apples with peanut butter are usually a staple as well. I also like to have oatmeal with cinnamon, bananas and walnuts. If you like tofu, I like to scramble tofu with some onions, peppers & mushrooms and put the mixture on wheat toast to make a quick sandwich :)
I usually have cold cereal (this morning was Optimum Slim) with Silk light vanilla soymilk.

Sometimes plain oatmeal with 2t or so brown sugar and either fruit, some light vanilla soymilk, or Earth Balance mixed in.  When I'm feeling okay about a bunch of calories in the morning I put in all three.

Oh yeah, and I just totally perfected my pancake recipe last weekend.  They were so amazing they didn't need syrup or anything (which was good because I ran out).  I'll have to post the recipe at some point. 
i usually have 2 packs of oatmeal and a nature valley bar crunched up in it. it keeps me fulllll for a long time... grand total 500 calories. (i'm maintaining w/ jus t 3 big meals)
