What to eat with cabbage?
I don't really eat sandwiches, so please don't suggest replacing lettuce with it. :P
Cabbage salad! It's actually the salad I eat for most of the winter because it's cheap and in season when other produce is blah.
There are lots of recipes, but I basically just shred cabbage and some carrots, add a pinch of salt, a pinch of sugar, some lemon juice (or vinegar) and a splash of olive oil. Yum.
Mark Bittman (NY Times food columnist) did a piece on cabbage last week. I'm sure it's up online. He has a method of salting it and then rinsing it, and apparently it makes the texture amazing.
Braised Cabbage. I hope I'm allowed to post a link to a recipe. But, I've tried this one and it's always come out delicious.

A lot of people use a combo of chop meat, rice, and raisins, then smother the wrapped cabbages with tomato sauce and let it simmer for 2 hours.
Since you're vegetarian, you could easily use TVP instead of meat.
1 medium onion -- chopped
2 tablespoons oil
1 package Yves Veggie Ground Round
3/4 teaspoon salt
1/8 teaspoon pepper
1 large cabbage -- coarsely sliced
1 can tomato soup, condensed
Preheat oven to 350
Saute onion in the oil, then add ground round, salt and pepper.
In 2 quart baking dish put half the cabbage, cover with
onion mixture. Top with other half of cabbage. Pour over the top
the tomato soup. Cover with foil, bake 1 hour and serve.
Sometimes I add a cup of rice, a cup of water and another half can of soup in between cabbage layers, if I want it to be more filling.
I usually slice it into strips and cook it in a pot with a bit of chicken broth over medium heat and the lid on to let it steam and soften and then in another pot I mix a can of diced tomatoes (with whatever seasoning looks good in them), cooked ground turkey, garlic, onions, green pepper, and mushrooms. Then I toss the red sauce onto the cabbage and mix it all up!
I think cabbage is one of the BEST bargain foods that exists. In the winter it is a buck a head at most for something that makes a huge pot of food once it is cut up.
Cabbage cooked in veggie broth and white cannelloni (sp?) beans with a side of whole grain garlic bread to dip in the broth. Yummerful.
If you like tomato sauce add it, with italian spices to give it a different taste.
i make a cabbage salad too, with cabbage, carrots, green beans, and pickles, all chopped up with a touch of dressing.
also, i make a stir fry with spinach, cabbage, carrots, green beans, garlic, and whatever other veggies i can find (eg snow peas or something) and stir fry it with a bit of soy sauce over top. vvvvvvvery yummy! im obsessed!
The only way i can eat cabbage is in cabbage-soup (usually with miso and tofu) or cooked to death in soup. I can eat it cole slaw only if there's red cabbage minced in there too with a vinegarette.
i'm not a huge cabbage fan, so i haven't tried this but...try sautee-ing it like kale?
Shredded cabbage makes a great base for any sort of stir fry. Just add some Asian seasonings and a package of frozen Asian veggies -- you'll be set.
