I fricking hate vegetables with a passion. Salads aren't too bad... when I dress them up of course, but I can never stomach veggies with out feeling nautious. I think the reason is because I went on a low-carb diet a long time ago... and that was all I could eat. So anyway... does anyone have an idea of how I can get more veggies in my diet?
I do want to add that I like things like sweet corn, potatoes, broccoli, and peas (and that's about it). But I heard that those are all starchy and not good... (except broccoli). So if I go with these veggies is that okay?

Broccoli and Peas are good... Sweet Potatoes are loads better than regular potatoes... And corn is really starchy/sugary so i'd avoid it if possible...
I don't sweat it much when it comes to potatoes and corn. As long as I log everything that goes into my mouth, and I'm making my calorie target, I'm ok cause I'm still losing. Better than forcing crap down that I don't like.

One way I like to do potatoes is to peel and cube them, spray some tin foil with Pam, put the spuds in there with some garlic and onion powder, pepper, and 1/2 tsp of margerine. Wrap them up, put them on a pan in the oven at 400 for 20 min, and yum tum.

Sometimes I add carrots, onions, and celery to canned soup. Makes the portions bigger and cuts the sodium. (I do chop them into little pieces because I hate crunchy vegetables in soup!) Either nuke them first or cook them soft in a cup and half of water first, then add the canned soup.

Any vegetable is a good vegetable. Eat the ones you like and you'll be doing great.
Take care in how they're prepared and what you add to them - steaming is very healthy and I think preserves flavor the most. Frozen vegetables are easy to reheat and are great at keeping their vitamins versus fresh and especially canned.

if you like broccoli, you sure you dont like cauliflower? They are basically the same thing, if you ask me. But cauliflower has a few diffrent vitamins. try mixing a little in with your broccoli .. you might not notice it in there ;)
Yeah, I don't care much for plain veggies either. Every once in a while I have a craving but the way I like them is always - uh - well, kind of defeats the purpose I think - like yellow squash baked in butter or green beans with bacon and onions...corn with butter and salt - well, you get the idea. Sorry, no help here.
I love veges so have no problems getting myself to eat them but, I have to make them interesting. My favourite ways to do them at the moment are to steam the veges, then dip them in satay sauce.. you could use any old sauce though, sweet chilli, sweet n sour, barbecue.. etc

Have you tried the Green Giant Frozen Boxed Vegetables? They're fantastic! They do some really nice things with broccoli, sugar snap peas, brussel sprouts (I never thought I'd like brussel sprouts). They usually have a butter or cream sauce, but the calories are pretty decent. They're also a little pricey, but it forces me to eat my veggies...

To make it less caloric, you can omit the parmesan cheese topping, and use spray olive oil instead of drizzling it. Also I found that if you steam or parboil the cauliflower first, it bakes better. I have made this with 1 head of cauliflower plus 1 head of broccoli, and it tastes great right out of the fridge as a leftover too.

Will you eat spaghetti sauce? Because I used to sneak veggies into my kids' red sauce. Very easy to do: just get yourself a food processor and shred the veggies into fine bits, then add to the sauce and cook it for awhile. You won't notice them at all. Works great with carrots and zucchini in particular.
I also use to sneak the veggies into all sorts of baked goods, but if you're watching your carbs you probably aren't eating much of that. You can actually doctor up chocolate cake mix with a box of frozen kale and a can of beets. Just defrost the kale, and then puree the kale and beets before adding to the choc cake mix. Reduce the amount of fat - the veggies will provide moisture. This makes a super super rich, moist cake that is also good for you!

I hated vegetables and fruits too. After I seriously cut back on eating fast food, and stopped drinking soda, they became much more bearable. I think that there is so much sugar in soda that it makes fruit bland by comparison and that is why I didn't like it. Also after eating greasy deep fat fried foods every day for years on end, I had no taste for vegetables. They were boring. I learned how to cook and I realized that if I added seasonings and sauteed vegetables in a tablespoon of canola oil, they would taste great and have far fewer calories than anything i could get at a fast food joint. Plus the portion size was huge, something that really helps when you are as big an eater as me.

i began loving veggies after realizing preparation makes ALL the difference - nobody likes soggy veggies - here are some examples of really good veggies:
1) carrots boiled just til crisp then tossed in a pan with tsp of olive oil and chopped parsley, drizzle with lemon juice
2)green chili pepper stuffed with finely diced tomatoes & onions (eat raw)
3)mashed turnip (not overcooked) with Splenda sweetner mixed in
4)if you don't like the "regular" veggies try the ethnic section - you'll be pleasantly surprised
rule of thumb - do not overcook veggies (this ruins them)

I just wanted to make a quick statement on the Fuze drinks. It says it has the antioxidents of 3 servings of veggies, not 3 servings of veggies, be careful! =)
