| 1 1/2 | cup cooked spinach |
| 4 | oz cottage cheese |
| 1 | tsp salt |
| 1 | tsp pepper |
| 1 | tsp garlic |
| 2 | tbsp parmesan cheese |
| 2 | cups egg substitute |
mix together all ingredients and bake at 375 under golden brown and quiche consistency--fork comes out clean
