i eat a lot of egg whites because they're a great, low-calorie source of protein and fill me up/energize me for a long time.. but i'm starting to find them kinda dull to eat.

does anyone have any tips, tricks or ways that they jazz up their egg whites?

add a little cheese to them

add a lot of salt

add some butter

better yet, eat whole eggs!

Tasty stuff..

Whip up some "clouds". I whip 3 egg whites, 1 tbsp sugar, some vanilla into a billowy meringue. While you're doing that, bring an inch or two of water in a sauce pan to a simmer, with just a few bubbles starting to form. In 3 or 4 parts, poach the meringue- a few minutes per side. You can serve it with heated jams or applesauce or whatever else you find appealing. It's like dessert!

I don't know, I just love em on their own! They're more fun to eat as an omlette though I think, or cooked into pancakes or something. I usually have my omlette with tomatoes, mushrooms, and a little red onion with black pepper. There's really no need to salt them since egg whites (eggs in general) are already pretty high sodium.

I keep a bag of frozen sliced peppers and onions in the freezer to saute up w/my egg whites.  I also add in mushrooms and whatever cheese I am in the mood for.  Don't limit your spices to just salt and pepper.  I have a steak rub that I will sometimes sprinkle on.  Or, top your egg whites with salsa!

You can make your egg whites savory or sweet depending on what you are "hankering"...

Savory: Herbs, spices, sauteed vegetables, tomatoes, olives, parsley, chicken or turkey breast, low calorie chicken or turkey breast sausage

Sweet: Rice Bran, Cinnamon, Apple Pie Spice, Nutmeg, Stevia

OR you can bake your egg whites... they will turn fluffy... like the consistency of bread! (Except ALL IT IS IS EGG WHITES!! woo!!)

Sweet eggs? I'm not sure that sounds appetizing, but I'm looking for new ways to make eggs too ... do you use all of these together? How much of each?

Yolk scares me!! It is so gross I hate it! BUT the whites are wonderful!!!! I like to scramble mine ( I am a huge fan of microwave scrambling because I hate scrubbing a stupid pan that has egg whites encrusted on it!) and seasoning them with tons of salt and pepper then adding them to a low cal tortilla with reduced fat feta AND LOTS of frank's red hot!! Also egg whites scrambled in between 2 pieces of light wheat toast with a slice of f/f american and frank's red hot is lovelly too :-).

for the record, i'm not "afraid" of egg yolks or anything; they're high in good cholesterol, and they're very tatsy.. but i find egg whites easier to work with (cooking-wise) and i try to keep my breakfast calories on the lower side.

I just got turned onto sweet eggs a few weeks ago and I love them! It started when I wanted French Toast but didnt have any light bread.  I mixed splenda, cinnamon and a little bit of soy milk in a bowl with egg whites, scrambled them up and then topped them with sf syrup and some spray butter.  It was so yummy! great for a low cal french toast fix! I have also tried as Gia said baking them, and then topping them with SF Strawberry preserve and alittle spray butter yummy!

My next experiment will involve unsweetened cocoa powder, splenda and soy milk so I will let you know how that turns out.

Thanks! I'm going to try that this morning! Do let me know how the chocolate eggs works out!

I'm personally a fan of sweet egg whites too. Apple cinnamon eggwhite omlet. I cut up a Golden Delicious apple and use a little butter in the pan on the stove and toss in cinnamon. Heat the apple pieces until slightly soft (depends how you like them) I don't add sugar because I like the sweetness of the apple. Separately I cook the egg white, shape of an omlet, and then pour the cooked apples on top. It's really good!

What do you do with the yolks?  Throw them away?  Or do you buy the egg white stuff in the cartons next to the egg beaters?Smile

i buy the egg whites that already come in cartons, i wouldn't waste the yolks.

I love egg whites.   I eat them a couple of times a week by cooking a pile of vegetables and garlic in a nonstic pan then I lightly whip the yolks with pepper and then either spicy mustard or cherry pepper spread.  Throw the whites in the pan and the whole thing in the oven.  Serve with fresh baked pita bread.  I use whole eggs and feed the yolks to my dogs.
