You can eat an entire eggplant for only about 140cals.  What I like to do is slice it up, and put it in the microwave on sensor.  When it is done i sprinkle some salt and pepper on top...I put it in a tuperware for lunch...Its very filling, and there is lots of fibre, and little fat...ITs amazing. Plus, and the grocery store its less than a dollar a pound! That makes a full lunch!

What do egplants taste like?  I've always thought they looked cool, and been tempted to buy one and make something with it, but haven't so far.
Not the way I like em! Breaded and fried in oil -- OH MY GOD it's HEAVEN! Needless to say, I don't eat eggplant. :) I've never had them any other way -- not sure how they taste  when cooked healthfully. 
I like the taste combination of eggplant and tomato.  My favorite eggplant dish is a combo of tomatoes, peppers, onions and eggplant, simply stewed together.

It also makes a wonderful spread or dip.  Roast the whole eggplant until soft, let it cool, scrape out the flesh and chop it with lemon juice, salt, and lots of parsley and garlic.  Delicious!
I like to roast it and then peel off the skin.  Massh it up, throw in some onions and then some spices and it's awesome!
i like to cut the eggplant in half length wise, microwave it until i can scoop out the stuff from the skin.. then i mash that all up and mix it with either some salsa or some fat free creamy salad dressing (i like blue cheese or ranch).. makes a nice warm filling meal/side.
You guys are AWESOME!  Here I just bought an eggplant this week because I heard they are healthy, But I didn't have a clue with what to do with it!

i use eggplant and make ratatouille.  Its a dish from south of france which combines tomatoes onions red pepers, egg plant, and spice and you serve it over pasta, so good,

If you like asian style foods, sauteing or stir fry is a good option for egg plants.  Egg plant is used in many vegetarian dishes and it has a good amount of fiber like jennifer mentioned!  Use it instead of meat if you like to make a stir fry dishes!
I was a little too lazy to make a full-blown ratatoullie today so I got some alluminum foil, cut 2 thick slices off the massive specimen I have in my fridge, added 1/2 a zuchinni, a sweet pickled gerkin chopped up, some capsicum (peppers), fresh garlic and a smear of tomato paste, wrapped it up, chucked it in the oven for 50mins and voila! A steaming package of yum! It went well with the salmon I had to polish off..
Eggplant Pizzaiola (Pizza style eggplant)

Peel and slice an eggplant lengthwise and arrange the slices on a round pizza pan, overlapping. Brush the pan and the top of the slices with a little olive oil.  Preheat the oven to 400 f.  Bake the eggplant for just 10 minutes to soften, watching so it doesn't scorch.  Remove from the oven and top as you would a pizza.  Put it back in the oven and bake until the cheese is beginning to brown on top. 

You won't be able to pick up the slices - use a fork and knife. 
I play hide the veggies.  When I make lasagne, I will slice up an eggplant thin and hide it in the layers.  Also works for zucchini and spinach.

This is a great thread!  I love eggplant, but I haven't been very creative with it.  I'll definitely have to try mashing it.

I usually bake thin slices and either make eggplant lasagna or make sandwiches.  It's yummy w/ a little marinara an mozz. 

I have to admit...even tho I love eggplant prepared many different ways, I still think fried is the yummiest.  ;D
Try lightly breading the eggplant slices before baking them... really really delicious.
I like my cheese and wine on a Friday night, but crakers for cheese are a no no when trying to lose weight.  Anyway, making eggplant thingies for the cheese is great.  Just slice the eggpant into 1 cm wedges and bake until they are as crisp as you like them.  Great with any type of cheese, hummus, etc.
