| 1 | large eggplant (20 oz) |
| 1 | large egg |
| 1 | cup Italian breadcrumbs |
| 1 | tsp oregano |
| 1 | tsp basil |
| 1 | cup Marinara sauce |
| 1/2 | cup mozzarella cheese |
| 2 | tbs olive oil |
Recipe Directions for eggplant parmesan
- slice eggplant into 1/4 to 1/2 in slices
- beat egg
- dip eggplant slices into egg, then into breadcrumbs
- In a large skillet, heat olive oil
- brown eggplant in oilve oil
- layer sauce and eggplant slices with a sprinkle of mozzarella cheese adding spices to each layer
- top with remaining sauce and cheese
- Bake at 350 for 30 minutes
