Eggplant Parmesan Recipe

All in one skillet meal of breaded eggplant and salt free tomato sauce.

Ingredients
1 medium eggplant, peeled and sliced
1/4 cup soy flour
1/4 cup brown rice flour
2 tablespoons olive oil
8 oz tomato sauce, no salt
1/4 cup grated cheddar cheese
Directions
Heat oil in skillet. Dip eggplant slices in water and dredge lightly in flours. Fry and remove. When all is fried, layer slices, tomato sauce and cheese. Done.
