eggplant recipes anybody?

I'm dying to eat more eggplant. it seems like the only time i eat it is in eggplant parmesan which is NOT low cal. anybody have any amazing eggplant recipes that are low cal?

I don't have a recipe, but I bet you could find one here for this yummy dip called baba ganouj.  It is made from roasted eggplant that is mashed up and mixed with olive oil and other things for flavor. Delicious with fresh veggies and pita chips.

I loveeee making this, its yummy;

tin of chopped tomatoes and add some chickpeas (and any other pulses), herbs, pepper any flavourings you fancy, cook it untill the chick peas are nice and soft then pour like half of it into a baking dish. then i put a layer over the top of sliced egg plant, and another layer of tomatoes and then another layer of egg plant.

I top it off with a nice low fat cheese sause and bake in the oven untill its nice and crisp.

Grilled Veggies in a hot oven

We are on the tail end of winter veggies but try the following: sweet potatoes carrots eggplant (cubed-large) turnips (like white carrots) peppers (large pieces) and any other veggies you have a taste for.

In a bowl place veggies, toss with 1 tbsp olive oil, and use any seasoning you like-my family likes DRY ranch dressing. Coat large cookie sheet with spray coating and add veggies. Bake at 425 degrees for about 10-20 minutes...Varies depending on whether you like DONE or slightly done! Enjoy-

Eggplant Pizzaiola

slice eggplant 1/2" thick, peeled or unpeeled.  Spray or brush with a small amount of olive oil.  Arrange, overlapping on a pizza pan, to cover the entire pan.  Bake at 350F for 20 minutes or until the eggplant is softened.  Take it from the oven and top as you would a pizza.  Increase the oven heat to 400F and bake until the cheese is bubbling and the "pizza" is hot.

You won't be able to cut it into wedges or pick it up - use a spatula and eat it with a knife and fork.

will give you a nice indian recipe with eggplant.

1.roast the eggplant in oven or on gas stove till it leaves all the water and the skin can be peeled.

2.Pell the skin and mash the eggplant and keep aside.

3.Chop 2 medium onion and 2 tomatoes.

4.heat oil in a pan, add turmeric, mustard seeds,some sliced chilli,asafoetida,chilli powder,coriander powder

5.Add chopped onion and fry till pinkish and then ass tomatoes.

6.Add salt to taste and cook till the tomatoes are cooked.

7.Then add some peas and cook for 5 mins.

8.Add the mashed eggplant and cook for 10-15 mins.

And it is ready to beeaten with bread.

Make it low cal by adding 1-2 tspn oil.

Baked Ziti w/Roasted Veggies Makes 8 servings 1 pound eggplant,cut in 1" cubes 1 large red onion,cut in 1" cubes 2 yellow peppers,chopped 1 tablespoon olive oil 1/2 teaspoon salt
Sauce: 1 teaspoon olive oil 1 cup onions,finely chopped 2 teaspoons garlic,minced 1/4 teaspoon crushed red pepper 1/4 teaspoon fennel seed,crushed 28 ounces tomatoes, canned,crushed 1/4 teaspoon salt 1/2 teaspoon fresh ground pepper 1/4 teaspoon sugar 1 pinch thyme 2 tablespoons fresh parsley,chopped 16 ounces ziti pasta,1 package 10 ounces spinach,chopped 1 cup mozzarella cheese, lowfat,shredded

Directions

  1. Heat oven to 450°F. Toss eggplant, red onion, peppers, oil, and salt in jellypoll pan. Roast 30 minutes, stirring once or twice, until vegetables begin to brown.

  2. Make sauce: Heat oil in saucepan. Add onions and cook covered over medium-low heat 10 minutes. Stir in garlic, red pepper, and fennel; cook 30 seconds. Add tomatoes, salt, pepper, sugar, and thyme. Bring to boil, reduce heat and simmer 15 minutes. Sitr in parsley. Makes 3 cups.

  3. Reduce oven heat to 400°F. Toss ziti with vegetables, sauce and spinach in bowl. Spread in shallow 3-quart baking dish. Sprinkle mozzarella over top. Bake 20 minutes or until bubbly.

this takes some time...I just used a jarred sauce, and whole wheat pasta, and added 1/2lb italian sausage which adds some calories but I love it when I made it, otherwise very yummy!

I cut an eggplant horizontally  in half .

I make diagonal cuts all along and I put garlic slices in them. I add some seasoning, like pepper, salt, sometimes even some grated lowfat cheese.

Then i place them in a baking pan with cooking spray and put in the oven 400ºF for I dunno, 20 min, you have to check with a fork to see if it's soft enough to eat. It's delicious to eat as a side dish  and very easy and fast.
