Ok, with all the topics about egg whites and egg substitutes I thought I would start one about eggs. So what do people like to do with eggs (chicken, ostrich, quale, etc) The rules, or in this case one rule, are simple it needs to involve the entire egg, no "I use one egg, and 30 egg whites).

Personally I like making omelets with them. I beat the eggs with a bit of soy sauce and different spices like garam masala, then add sauteed mushrooms before folding it. I also like just to shred them on a salad and use soy sauce for dressing.

I make a lot of frittttas, especially in the summer when I have lots of zucchini.  I just dice up whatever leftover vegies (potatoes are also good), or saute some raw ones in a drizzle of olive oil, lightly mix the eggs with some herbs, cook it on the stovetop until the bottom is set, then put it under the broiler to finish the top.  I like it hot, and also cold for lunch.  It is also good cold on a sandwich the next day.

I love egg plant! Are the crackers for crispiness?

i eat them lots of different ways, but these are my favorites: add them to a brown rice/veggie stirfry, scrambled with just salt and lots of black pepper, and of course, french toast.

I like omelets, too.  But my favorite thing to do with eggs is shanasedai's Poro.  I've tried making it in various different ways - added all kinds of veggies, even salmon/tuna/turkey for additional protein.  It is always satisfying and makes for a delicious meal.  

And yes, whenever I have Poro I use the whole egg :D  It doesn't work with eggwhites only!

I'll have to try the shredding them on a salad.  I've done that for on top of stir fries, or a homemade version of Pad Thai...but never on greens.

Yep, that is where I got my idea of adding spices in to my omelette. :)

I love omelettes too!  My husband makes amazing ones and I love getting spoiled with them.  Granted it's lowfat cheese and low sodium ham these days but they're still the best!  The poro sounds great so I've got to try that!  I keep a couple standby hardboiled eggs in the fridge on days I know are going to be hectic since otherwise I undereat or my protein is way under where it should be.  I tried going egg whites only and just couldn't but I'm doing them within reason and my cholesterol has never been an issue, so for now I'm safe!

I'm a big fan of frittatas as well.... very chunky, satisfying way to eat eggs.  Although I also love plain old poached eggs as well.   Great on their own with plenty of freshly ground black pepper and some grainy toast at breakfast or as a warm addition to liven up a Salad Nicoise.

Method....  Heat lightly salted water in a deep-ish wide-based pan such as a saute pan until there are continuous tiny bubbles just breaking the surface... (not a rolling boil)  Crack a room -temperature egg, slide contents gently into the water and cook for about 4 mins. Remove with a slotted spoon.

I'm really into egg cookery:) One of the first dishes I ever learned to cook was a French omelette. Ironically, I now find I prefer scrambled eggs. I used to hate scrambled eggs until I found out that the good ones were cooked over very gentle heat until they aren't slimy. Overcooked scrambled eggs are horrible!

I usually make omelets. I either just make it simple, just the egg with some salt or I'll add some ham, cheese or mushrooms :D

I'm sorta boring, I love scrambled eggs on toast with some ketchup. There's something so satisfying about it!

I make a great omelet (healthy side)...I use red and green peppers, onions, mushrooms, cheese, salsa or fresh diced tomates, and I sprinkle some italian spice on it.  Now for me an omelett isnt done until it has some hot sauce on it.

I love whole eggs. Omelettes with cheese and cherry tomatoes; frittatas, quiches, poached eggs on buttered wholegrain toast, scrambled eggs with parma ham, soft-boiled eggs with toast soldiers...

I like to make toast spread with tomato relish; then I pour on a mixture of beaten egg, diced onion, parsley and grated cheese and pop under the grill. Makes cheese on toast more exciting...

What else... French eggs baked in cream, home-made pasta made with eggs, sliced fried eggs thrown into Asian wok dishes like pad thai, huevos rancheros, egg and spinach sandwiches, potato and egg salads, Caesar salads made with quail eggs, soft-boiled eggs in a salade Nicoise, French toast...

Indian food has hundreds of great egg recipes where eggs can replace the meat protein elements, like egg pakoda, egg burji, egg vindaloo, egg masalas, egg koftas...

And on the odd occasions I do use egg whites in addition to whole eggs, I have plenty of uses for those yolks - creme caramels, creme brulee, icecream, custards, crepes, cherry clafoutis and mousses.

I've been living in a hotel this entire year, so I'm currently without an oven - which stops me from making some of my favourites. But not having an oven means eggs in some shape or form are definitely a staple in my diet - there are enough oven-free egg recipes to keep me going for a while.

I so love eggs.  I even have a journal entry about it as silly as it sounds.

I love my eggs in omelets, boiled, scrambled, sunny side up.  I make different kind of omelets.  Spicy ones with oregano and black pepper.  Or an omelet with green peppers and onions.  I also have made a tomato omelet or scrambled eggs with sauteed in olive oil tomatoes.  I have also made egg muffins in the oven.  Just beat and egg, add some onions, green peppers, ham for my family who eats it, and place it in the cupcake tray.  Taste really good. 

But recently I've been into my eggs being sunny-side up with a soft yoke.  I like to dip my whole wheat crackers into them, add a little salt on my eggs, and it is oh so good.

*The mushrooms sound good inside the egg.  Might try it. :)

The crackers are indeed for crispiness :)  The whole thing was quite delectable!

NOTHING is better that a great egg salad sandwich on soooft white bread, the non-nutritious stuff, just all fluff. Diced hard boiled egg whites with smoooooth, creamy egg yolks mixed with Miracle Whip, a dollop of mustard, a touch of minced dill pickle and salt & pepper. YUMMMMM! Damn the cholestrol, I'm making egg salad right now.

I've been on an egg kick lately, also.

This morning for breakfast, I had 1/2 whole wheat pita filled with an over-easy egg, 2 tbsp of shredded cheese, some dijon mustard and lettuce.  First bite and the yolk breaks and mixes everything together.  Bliss!

I'm pretty obsessed with different kinds of quiches.  Soooooo yummy.
