Ok, with all the topics about egg whites and egg substitutes I thought I would start one about eggs. So what do people like to do with eggs (chicken, ostrich, quale, etc) The rules, or in this case one rule, are simple it needs to involve the entire egg, no "I use one egg, and 30 egg whites).
Personally I like making omelets with them. I beat the eggs with a bit of soy sauce and different spices like garam masala, then add sauteed mushrooms before folding it. I also like just to shred them on a salad and use soy sauce for dressing.

Hurrah for whole eggs! I'll eat them any way except sunny side up (too ooky for my tastes). Growing up we had a tradition of eggs for Sunday breakfast. Always two whole eggs, usually poached on buttered toast or as fried egg sandwiches. Now on my own in college I do poached eggs on a half an english muffin (one egg to a half a muffin) and of late have eaten them with a slice of tomato. I like egg salad with sweet relish and chopped onions and celery in it. I like to hard boil eggs and slice them on toast...add some pepper and a slice of tomato and you have a really nice sandwich. My absolute favorite egg dish is deviled eggs. mmm heaven

Seconded! And also that Chinese egg tomato smush... I ate it all the time in China and Tibet.
It's not really a recipe, just an idea, but it still tastes great... It's often served with spring onion and fried pork too, and usually fried rice or noodles on the side.

well, I simply LOVE them scrambled with salsa, and maybe a little black pepper! mmm!
I like them on a toast with ketchup too!
I also like frying an egg sunny side up, and then mashing it together with my rice... using soysauce and toasted sesame oil like my mother used to make me. :)
I like my egg in everyway! I usually use whole eggs as well, I don't see the point of sacrificing the most delicious part for like 60 calories. I only use egg whites when I used up all my calories for the day or something but that rarely happens, I love my whole eggs!
My family has a German tradition for Holy Thursday/Gruen Donnerstag (thurs before easter sunday). Rice, spinach and eggs. A layer of rice with a layer of cooked spinach on top of that and then eggs any style on top of the whole thing. My dad always had a sunny side up egg (called a Spiegel ei in german...literally "mirror egg"). I preferred mine scrambled because then it's just a pile of mush.

How is spinach usually cooked? Only way I heard is being boiled to death. Doesn't seem very appetizing or flavorful.

I looove whole eggs...egg salad, deviled eggs, and over-easy eggs (with whole wheat toast) are my faves...
My hubby loves "toad in the hole" (not the traditional British dish), while I prefer French toast.

Well, to be quite honest it was usually frozen spinach that had been boiled in water, drained and had some salt and pepper shaken on it. Fresh spinach in my house was usually steamed (put the leaves in a pot with a little water on low-medium heat and cover). It is a kind of bland dinner, but it is the Easter season at the end of Lent...happy food is not yet to come lol. To each his own tastes. I personally love the iron-y tang of the spinach with the starchy baseline of the rice and the rich taste of the egg on top. All I need is some salt and pepper and I am good to go.
Boiled and fried are my favorites! Yolk is my favorite part of the egg.
While on my vacation on the East Coast, I had a Philly Steak Cheese Omelet that is absolutely the best omelet I have ever had.

Try spinach this way and you'll be hooked
Melt a tsp of butter and add about 1/4 cup of chicken stock. [or more/less depending on the amount of spinach, you don't want to end up with soup!] Bring to a boil then lower the heat and add the spinach, saute until it wilts. Season with some black pepper, crushed red pepper and garlic powder.
And sticking to the subject... use it for Eggs Florentine! I leave off the sauce, though, and just eat the english muffin, spinach and runny egg topped with a slice of Jack veggie cheese.
