Ener-G egg substitute?
..anyone tried it??
I have, it's kind of hard to work with at first when baking, but you get the hang of it pretty fast. You can't make, like, vegan scrambled eggs or anything with it, which is a downfall, but you mostly do baking and things with it.
Make sure you make the water HOT before mixing it in, otherwise it takes forEVER for it to mix and you'll use most of the time stirring it.

I like it...I use it a lot in baking and it makes a big difference to me. I use a whisk and warm water and mix it in last.
I don't really care for the egg replacer. Usually some arrowroot, ground flax, or apple sauce can work depending on the recipe.
I was looking for that once and I was told that it's pretty much just corn starch- now I use 3 tb cornstarch w. 1 tb water and it works pretty well. I've also used banana but you have to be careful about that- sometimes the banana taste takess over. Pumpkin works well, as does applesauce. Just play around and see what you like best!
Does cornstarch work well as a binder? My husband makes wonderful veggie burgers, but has to use an egg to bind it. I would love to be able to make them (or, realistically, have *him* make them) for some vegan friends. We couldn't find an egg substitute in my area.

I think it works pretty well. I've found it works the best in pie crust. Mm.. pie.
