Hello everyone! I was wondering what kind of salads everyone eats during the summer months.
I usually keep it simple--caesar salad with grilled chicken breast, or--the Asian Chicken Salad from Jack in the box :)
I would say I eat salad 99% of the time for my lunch.
I take 1/2 whole wheat pita bread place it in the bottom of my salad bowl then add the following;
Big leaf lettice (from my garden) 1 oz
Spinach (from my garden) 1 oz
Red Cabbage 2 oz
Cucumber (from my garden) 3 oz
Broccoli 2 oz
Cherry tomatoes (from my garden) 2 oz
Radish (from my garden) 1 oz
Carrots (from my garden) 1 oz
Zucchini (from my garden) 2.5 oz
Yellow banana pepper (from my garden) 1 oz
Peas (from my garden) 1 oz shelled
Avocado 1 oz
Then I add about 2 oz balsamic vinegar to it and enjoy!
For my it is the most economical lunch I can have and I love it.

I slice up vegetable medley's all the time. Example; diakon, cucumber w/peel, green peppers, mushrooms, and sugar snap peas and put them all in a big bowl. Occasionally I'll add apple slices or vinegar and pepper, but most of the time I just eat it all plain. On cooler days I microwave my bizarre combination with a bit of spray butter.
It's not really an officially named salad, but I love vegetables, so the variety mixed into one sitting works for me. I am full for hours after eating this.
I know this dosn't sound like a place to get a salad but steak and sheak's apple chicken salad is to die for, and is kinda low cal if you go easy on the dressing(which always comes on the side BTW)
If you like fruit the Strawberry Poppyseed salad from Panera is really good. It's not too bad calorie wise and I always get it without the nuts because I'm not a huge fam of them. Also if you have Chick-fil-a, their salads are good too. I always get the Chargrilled and fruit salad. I love the salty/sweet combo! It's a nice change from the normal salad with lots of veggies.
MY FAVORITE SALAD EVER:
- butter lettuce & spinach
- tomatoes
- olives
- artichoke hearts
- hard boiled eggs
- tuna belly
- bell peppers
- red onion
- green beans
- olive oil, dijon mustard & white wine vinegar
The salad I eat basically every day:
Spinach/Arugula (mix it up depending on what's cheaper that week)
Chick peas/grilled chicken (alternate every other day)
Cucumber
Radishes
Grape Tomatos
Cauliflower
Broccoli
Baby Corn
Bell Peppers
White Mushrooms
Old Cape Cod Lite Balsamic Vinaigrette or Boathouse Yogurt dressings
All kinds but my main ones are.
Chicken
Feta, walnut & beetroot
Tuna
Fresh mozarella & pancetta
Nearly all of these have lettuce, tomato, carrot & sultanas in them as the salad content.
I have basic arugula, or a baby lettuce blend, in the bowl, topped with about 20 grams of avocado, some chopped red pepper, a small tomato, a bit of onion, maybe a scoop of cottage cheese, a few raisins and some sunflower seeds, maybe some shredded beetroot, or toasted pinenuts. If I don't have the cottage cheese, I'll use a bit of olive olive. And I love croutons, but they have to be homemade so if I've run out :/ I might add some cheese if I was out of avocado.
I love a simple strawberry salad....
Mixed greens, sliced strawberries, toasted walnuts, basalmic glaze.....
TGIFridays has a great one if it's near you. Even with the chicken breast, its still only around 500 calories.
