Recipe Ingredients for Evelyn's Favorite Pasta

12 oz Penne
16 oz Broccoli
16 oz Mushrooms
6 serving Sun Dried Tomatoes
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
8 pieces VIGO ARTICHOKE HEARTS
2 oz Krinos Pitted Kalamata Olives
8 clove Garlic
2 oz Olive Oil, Extra Virgin
1/2 cup leaves, whole Basil, Fresh
2 oz Pine Nuts, Pinyon, Dried

Recipe Directions for Evelyn's Favorite Pasta

  1. Heat oven to 400.

  2. Place all vegetables on a baking sheet and toss with olive oil. Sprinkle with salt and pepper and roast to desired doneness.

  3. In a large bowl, toss roasted vegetables with pasta, basil and toasted pine nuts. Adjust olive oil, salt and pepper to your taste.
