I'm confused as to why the week's on the exercise plan only have 6 days. Am I missing something?

I don't know where you're getting the exercise plans from, but your body needs AT LEAST one day recovery a week, preferably 2 and not back to back. You don't have to be sedetary, just don't do any hard exercise. So they probably don't even write down the rest day on whatever plan you are looking at.
