what to do with extra shredded zucchini

so I am making some whole wheat zuchinni bread and of course I shredded waaaay to much zuchinni

 

Any suggestions?

Chocolate chip zucchini cake or you can drain the moisture from it and make like a fried cake or something or mix it into a meatlaof!

I would chuck it into a quiche, flan or frittata.

you can freeze it. It'll actually keep quite well and then you can just make more zucchini bread when you get more :)

Zuchinni-haloumi "fritters"...just mix the shredded zuchinni with some grated haloumi cheese (low-fat feta would work too, probably), some flour and an egg or egg substitute, salt, pepper, chopped dill and green onion. Form into patties and place in a medium-hot frying pan sprayed with cooking spray and cook until golden brown on each side. Serve with yogurt mixed with dill and a wedge of lemon.

Put it in oatmeal with some spices, raisins, and walnuts - zucchini bread oatmeal!

Zucchini "crab" cakes. I don't think they really taste like crab, exactly, but they're pretty tasty. Oh, and bake them, rather than frying - much better for you.
