Heads up: It involves vegetables. :) Sorry if you were expecting a 30 calorie brownie recipe (Anyone??!!)

But I made this today, and it was AMAZING. I was also happy knowing I was only eating 30 calories.

All you need is Zucchini, natural lemon juice, and lemon pepper. I guarentee the flavor is delicous.

Just slice a zucchini in thin slices (keeping the skin on), heat a pan on med-high heat and sprinkle it with lemon pepper. Toss the slices in the pan, and use a spatchula to spread them evenly across the pan. Squirt a couple of teaspoons of lemon juice, and stir-fry and flip the slices until they are a golden color.

Yummy! I love my greens! I steam broccoli in a bamboo steamer, sprinkle a few pinches of marigam ( spelled?) while it steams...then when done put all in a bowl, sqirt some fresh lemon juice on and toss around...and yum! low cal and good for you!

I also enjoy sliced raw cucumbers or squash sprinkled with Durkee Citrus Blend. Just slice, sprinkle, let rest for a few minutes, and eat. Leftovers, if there are any, are fine in the fridge for a day or so. And they are great in salads.

We have taken them along to picnics a few times, and they go over very well.

 Aha. I've been mistaken for a vegetarian more than once :)

And I LOVE steamed broccoli. Lemon juice is like an alternative to olive oil for me. But if olive oil wasn't so high cal, I would probably use it more often.

Thanks for the ideas...anyone have any squash ones? We have a bunch just sitting in the fridge.

try the on the grill, rap them with foil as you would a bake potato ever so often turn them around till the become soft  to the touch and onions the same way till they become soft and with lemon juice  delicious!!

I do this all the time.. I called them "zucchini fries" haha

I love zucchini, it's mild and has that firm yet tender texture and can be used in just about everything

sometimes I like to just pan fry slices and then spread natural tomato sauce or paste on them, sprinkle with seasonings (and maybe a little parmesan cheese) and they're amazing little low-calorie "mini pizza bites"

My husband had a business trip to Mexico recently where he was introduced to a jalepeno recipe that rocks. You grill or broil the washed jalepenos until a little soft, then add the juice of a whole lemon for about 10 jalenoos, and add salt and pepper. Place in a bowl for 5 minutes before eating to marinate a bit.

So simple, so cheap and so tasty.

As for zukes, my garden gets them all at once every year, as well as green and yellow beans, for that matter.

I like to make a stewed veggie dish where I use whatever is ripe: chunks of zukes, green or yellow beans, cabbage, onions, garlic, andfresh or canned whole tomatoes with snipped oregano and thyme. Salt and pepper to taste.

I also add lentils to this and it is so delicious- both my dog and i gobble it up.

I like to make zuchini "roll-ups" too, sliced the long way into strips, I lightly steam or fry them - no oil in a skillet. Then fill with a tablespoon or two of  rice with meat, fish or cheese, place into a baking dish and top with tomato sauce or  a cheese mixture of motzarella and cheddar. Depends on my caloric intake for the day... bake at 350 for 20 minutes or you can nuke it for 2 minutes.

And...once in a blue moon I make fried zucchini as it is the ONLY way my hubby will eat it.

Oh yes, I also make terrific zuke fritatta and use the blossoms too.

It's so nice to see vegetable recipes that use natural, plain old vegetables.  People don't stop to think how versatile they are.
