Recipe Ingredients for fat free bran muffin

2 c. all bran cereal
1 1/4 c. 1% milk
1/2 c. whole wheat flour
1 tbsp wheat germ
1/2 c. white flour
1/2 c. firmly packed brown sugar
2 tsp. baking powder
1 tsp. cinnamon
3/4 c. unsweetened applesauce
1 cup blueberries
2 egg whites
1 tsp. vanilla

Recipe Directions for fat free bran muffin

  1. Combine bran and milk; set aside 5 minutes.

  2. Mix remaining dry ingredients.

  3. Mix together applesauce, egg whites and vanilla;

  4. add to bran/milk mix.

  5. Add dry ingredients and stir only until moistened.

  6. Divide evenly into 12 muffin cups.

  7. Bake at 400 degrees for 22 minutes. Do not overbake.
