What do you like to make that requires no cooking?  Share recipes and techniques, secret, healthy ingredients and stories about how you came up with the recipe!

My favorite is vegetable slaw made in my food processor.  I use a variety of crunchy, colorful vegetables in it.

Using the coarse grater blade, or shredded blade to shred any of the following in any combination, to yield 4 to 6 cups.

cabbage
celery
peppers
cucumber
carrots
celery
radishes
zucchini
(use your imagination!)

Dress with just 1/4 cup of vinaigrette, cover and refrigerate for at least 2 hours.  It gets better the next day.

Recipe for 3/4 cup of Claire's vinaigrette

1/2 cup rice vinegar (or white balsamic, or cider vinegar)
1/4 cup olive oil
1 tsp honey
1 tsp dijon mustard
1/4 tsp salt
dash of hot sauce (optional)

Put in a jar with a tight fitting lid and shake until completely mixed.  Measure out 1/4 cup and toss with the slaw.

This doesn't seem like a very hot topic even though I love the no cooking meals! I think my favorite is a veggie ceasar wrap. I start with a tortilla and lightly drizzle some lowfat ranch or ceasar dressing. I usually go with whatever leftover veggies we have in the fridge, tomatoes, Mushrooms, Bell Peppers, Spinich. Then I find some Deli Meat or Left over chicken and add that. I put in some cheese, (Last time we did Gorgonzola... It was delish!) and wrap it up and good to go. I know it isnt very complicated but when you want something healthy and yummy this is as go to!

Chicken Caesar Salad wrap! My kids love them! We have a cute bistro in town, called "Wrapture" and theirs are very very good, so we try to imitate the flavor at home. The key is the crunchy croutons! At first, I thought "why put croutons into a wrap--won't that be too much bread?" but the kids insisted, and they were right. The crunch is very satisfying. This can be as low fat as you want, if you use the right dressing and tortilla.

My second favorite no-cook food is a giant fruit salad, with whatever fresh fruit I can find. In summer, it's easy and varied. In winter, I usually add some canned stuff, but it still requires no cooking.
