Favorite curry recipes?

I LOVE a good curry but have never attempted to make one myself.  I searched the recipe section of CC for "curry" but tons a recipes came up and it's hard to know where to start when you don't know which ones are the stand-outs.   So, I thought I'd just make a blanket request for any recipes you have that are your favorites.  They can be already uploaded to CC so you can link that, or you can list the recipe in a response here, too.

A general idea of my tastes- I love both Indian/Nepalese and Thai style curries.  I enjoy ones that are broth based (I'm assuming that's what's in them?)  and cream/coconut milk based.  Both sweet and spicy are OK.  Chicken and/or veggies are good.. but I don't like seafood.  Also, when it comes to ingredients, I am OK with buying simple things like coconut milk or curry powder/paste, but if there's a specialty item that is super expensive and/or that I would only use VERY rarely, I try to avoid that.  (Though, if you know of a recipe that is to die for that I just have to try that happens to have one of those unusual items, I'll give that a go, too.)
