Favorite Oatmeal Cookies Recipe

Oatmeal cookies from The Southern Living Cookbook

Ingredients
1 cup margarine, softened
1 1/2 cups splenda
1 large egg
1/4 cups water
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 cups oats, uncooked
Directions
  1. Cream butter; gradually add sugar, beating at medium speed of an eletric mixer until light and fluffy. Add egg, and beat well; add water and vanilla, mixing well.

  2. Combine flour, soda, salt, cinnamon, and nutmeg; add to creamed mixture, mixing well. Stir in oats.

  3. Drop dough by rounded teaspoonfuls on to ungreased cookie sheets. Bake at 350 for 10-20 minutes or until lightly browned. Cool slightly on cookie sheets; remove to wire racks to cool completely.
