hmmm... i cant choose. it's either between broccoli or okra.
i just always heat them up in the microwave! yummm
or asparagus, grilled, with butter or olive oil and garlic.

MUSHROOMS!!! HOLY CRAP! When i have them at home i boil them in water and brown rice vinigar, and if i'm feeling a little bit impish i'll put a dash of oil in for even more deliciousness. my favourite are the ones at wild oat's salad bar... they are better than intercource. mmmm.. safeway's are ok... they're fun to eat! but they're way too flavorful and you can really taste it.

I also am obsessed with broccoli. yummmm. I steam it & it's amazing.
so yeah, i definitely cant choose either.
I love oven-roasted broccoli, zucchini, brussels sprouts, carrots, cauliflower, and mushrooms, sprinkled with garlic powder and a little olive oil. I love mushrooms dipped in hummus. I even love to chop up the previously mentioned vegetables and mix them in with garlicky, savory oatmeal.
Fried green tomatoes rock my socks (even though they aren't "healthy...")
I also love turnips mashed with a little skim milk and butter, with a tiny bit of Splenda and black pepper sprinkled in. This is a lot like mashed potatoes to me but with literally 1/4 of the calories and hardly any fat.
But my favorite vegetable dish of all time would have to be a baked sweet potato with brown sugar and a little butter. I eat them skin and all. OMG. Nature's candy.
That's all I can think of for now. But vegetables are amazing, so versatile and good for you.
Edit: I also remembered that broccoli is great in pasta sauce. I love how the trees soak up the marinara and give the sauce such good texture. I make a great vegetarian marinara sauce with broccoli florets mixed in instead of meat. Delicious!
I love all veggies (except mushrooms, yecch) so it's hard to choose...here's my top 5
1. Heirloom tomatoes in season (drool)
2. Artichokes
3. Broccoli
4. Asparagus
5. Beets!
as for the starchy ones, I love sweet potatoes, sweet summer corn, fresh sugar snap peas...oh man I'm aching for summer to come!
Too hard to choose, I love all veggies. I steam, saute, or bake. I never boil or nuke, as it tends to leave them soggy and tasteless. I love to have left over steamed veggies with cottage cheese for breakfast or lunch. Add some salsa for a yummy punch!
