Favorite vegetable sandwiches

I'm a vegetarian and I love having the following sandwich, although to some it may sound gross.

Cucumber, lettuce, pickle, alfalfa sprouts, and either a slice of cheese or a little bit of light mayo on two slices of multigrain bread.

However, I want to mix it up. What are some of your favorite things to put on sandwiches [vegetables only] :]

Lettuce, Tomato, Carrots, Bell Pepper Rings, Onions, Banana Peppers and Jalapeno Peppers... That's what I get when I go to Subway...
avocado as a spread or thinly sliced! hummus as a spread instead of mayo! guess all i can come up with is mayo alternatives cause i'm not a fan of the stuff haha
Hummus, Tofu, Alfalfa Sprouts, Cucumber, Red Onion, and Green Pepper.  Yum yum yum.

Vegetarian version - mashed pumpkin and spinach
marinated tofu
Banana and PB
Cottage cheese and corn
Tomato and pineapple toasted (like a pizza if you add cheese!)
Mushrooms and some sort of wet vegetable (cooked, such as spinach or pumpkin) toasted, or pre grill the mushrooms in some lemon and dill or garlic
Mmm hummus is goood


Sandwhichs are just a meal in between bread. So put whatever in there.  had a porridge sandwhich once. Mm I love me my carbs
avocado, sprouts, spinach and tomato is my favorite. 
Grilled portabella mushrooms, cooked tomatoes, and diced cucumber with a layer of crunchy lettuce on the bottom between two slices of toasted whole wheat bread.

I always wanted to try like a taco sandwich (I'm a veggie too, so I wouldn't add meat to mine). Have lettuce, beans, peppers, salsa, a bit of cheese.. hmm.
One thing that I have been making sure of lately is to substitute raw spinach in for regular lettuce.  Sandwiches, salads, whatever.  I eat several servings of it a day.  I love dark green vegetables.
You could always make a black bean burrito on a multigrain wrap :)

Mmmmm...black bean and rice in a tortilla with just a sprinkle of cheddar and some salsa and avocado tucked in.

My favorite summer sandwich is thin slices of tomato with basil leaves and mozzarella cheese with a balsamic vinaigrette. Even better if you marinate the cheese and basil with the balsamic for a couple of days beforehand.

Used to like the lemon garlic marinated tofu that's sold in packages, but it hasn't seemed as good lately. Maybe when the weather's hot again.

I never thought of pickle with sprouts, but it sounds delicious! A couple of black olives, sliced, wouldn't be a bad addition, either. I'm finding that with the large variety of gourmet mustards and marinades now on the market, I can skip the mayo and use those instead.

How about a hot sandwich? One restaurant I go to has a hot veggie sandwich: it's a whole wheat pita, with sauteed broccoli, carrots, mushrooms, onions, topped with a little melted mozzorella, and a lot of soy sauce. You eat it with a fork and knife. Mmm...

Or take two tortillas, and layer in between them a mixture of chopped broccoli, carrots, onions mushrooms, tomatoes, cumin, cilantro, and just a bit of cheddar cheese (I just throw it all in the food processor so it grinds up small). Dry-fry in a non-stick skillet. Cut into wedges. Serve with salsa. You can also add black beans to this.
