Favourite Vege or Vegan meal?

Hey guys

I've been vegetarian for about 7 months now and have completely fallen in love with tofu.

Tofu stir fry is probably my favourite....... that and tofu sushi. XD

what about everyone else?

quorn sausages with a can of ratatouille and mixed in with rice like a massive risotto!! thats my favourite!!

other faves include jacket potato with cottage cheese, and falafel with houmous in pitta :)

what does tofu taste like in comparison to other foods? iv never tried it!

 

I like tempeh, the consistency is better than tofu and it has more protein

Lately I have been eating it cubed with cubes of sweet potato baked together in the oven with a little nutmeg.... really good. :)

 

try baking tofu with some marinade as well for a change of pace, trust me you will get sick of stir fry.

Wow, I love food too much to pick a favourite meal or dish, but since you mentioned tofu, and I have recently rediscovered my love of tofu, I'll mention some tofu dishes that I love:

#1 - tofu scramble.  I made this for breakfast yesterday and it was great!  Super easy, too...just sautee some veggies (I use onions and peppers) and toss in a block of crumbled firm tofu.  I seasoned with garlic and veggie broth concentrate.  MM!

#2 - tofu salad (like egg salad).  Just crumble up a block of firm tofu with some mustard, mayo (or mayo substitute) and crunchy veggies like pickles, celery or onions.

#3 veg lasagna with tofu "ricotta."  Lasagna is my old standby for having guests over because everyone loves it and it's easy to modify.  You can make it traditional by using a meat substitute in the sauce and sprinkling soy cheese on top.  You can make it super-veggie by adding layers of seasonal vegetables.  You can make it fancy by using ravioli instead of the middle pasta layer (I like to use butternut squash ravioli).  You can make it low-carb by using long strips of eggplant instead of pasta...In fact, you can make lasagne around basically any theme at all:  mushroom only, mexican lasagna, winter vegetable lasagna...  Oh, and the tofu!  Tofu ricotta is easy: just blend silken tofu with a little lemon juice, garlic, and salt...and I add chopped black olives and capers, too.  (based on the voluptuous vegan cook book)

Okay, enough of me and my love-affair with tofu!  Yes, you can get sick of tofu...and supposedly too much is not good for you...but I haven't gotten sick of it yet.  I put it in EVERYTHING!

I'm not big on tofu. But I make a killer black bean salad. The main ingredients are black beans, sweet potatoes, mangoes, and a mixture of hot peppers( habanero, jalapeno, serrano, cayenne).

I make a big batch once every two weeks or so and freeze half. I eat about a cup of it with lunch everyday.

i've actually just eaten my fave veggie meal (well, one of them) - a veggie tagine. the recipe is on my profile under my posts. aubergine (eggplant) and courgettes (zuchinni?) and chickpeas in spicy, spicy sauce. um um. lovely with wholewheat cous cous and pitta bread.

I second the tempeh.  I love tempeh--it's delicious.  My fave vegetarian food is seitan (wheat gluten), though.  That stuff is delicious, but a little strange looking.  I had a veg roomie in college and she swore by the stuff, and I took her word for it.  But once I went veggie myself, I decided to give it a try.  Seitan BBQ sandwiches (sautee seitan strips w/ onion, then add BBQ sauce and serve on a bun) got my weird-food phobic husband to swear by the stuff.  The problem with seitan (and tempeh) is that they are hard to find at "regular" grocery stores.  It's on the list of things I buy at Whole Foods (along with pastured eggs and some other goodies).  But they both last a pretty long time in the fridge, so you can buy seitan & tempeh and keep it around so if you have to make a special trip to buy it, you at least don't have to go too often. 

Today I had some of Trader Joe's Chicken-less strips, and made a barbeque sandwhich with them.. YUM!!

But I think my absolute favorite to date would be spinach, tomato and cheese (i still eat cheese and eggs) in a sandwich with basil pesto. OMG it tastes like heaven. I swear I was still thinking about that sandwich 4 hours after I ate it.

 That sounds good, but waaay too spicy for me! I might try that without the habenero and serrano.

it has to be.....

a hummus and raw sundried tomato cheese sandiwch on sourdough spelt bread, grilled.

The sourness of the cheese, and salty ness of bread, and everything melts together, its great great stuff.

homemade spicy bean patties :) i love them in whole wheat rolls with tomato salsa. and sweet potato fries if im super hungry. yum

My favorite lunch is:  black beans with lime juice and cilantro with melted cheese.  Mix in salsa and sour cream. 

YUMMY!!!

My favorite is a big mezze platter, complete with tabboule, hummus, baby spinach, carrot, olives, and pita bread. Very tasty.

My favorite non-homemade meal is Amy's mattar paneer dish. It is soo tasty. Not a fan of the rice, however...

I am a huge fan of Greek food so I love making hummus and falafal and putting that with an olive-rich salad and vinegrette. Love dolmas too! I am going to try making those myself sometime soon!

 OMG y'all are making me hungry!  I think I'm going to need a midnight snack.

My latest fave (altho I try to limit my soy intake) is a mock chicken salad wrap from whole foods.

That spicy black bean salad sounds awesome!  I like a good bit of heat, but I would probably tone it down slightly.  I use habenero powder (dried) in a lot of my foods because it's easier to control the heat.

I make a killer rendition of "Larb Chicken" (replacing chicken with TVP).  It's a super spicy and both sweet and sour Thai dish.  That's one on my faves, too.  I often use it for the stuffing of lettuce wraps.

I haven't experimented with tofu too much, but you are all giving me motivation to start! The few times I have used it it got really mushy, but I think I will try to bake some tonight. MMM.

I'm also a big fan of hearty soups: minestrone, lentil, tomato, black bean, corn. Soup paired with a big salad and some crusty bread is GREAT.

I also like Mexican food- tacos, burritos, enchiladas, taco salads. Boca Meat is REALLY good in these (my meat eating husband cant tell a difference), and the beans are an extra source of protein!

Shoot, I'm getting hungry right now!
