Cooking with Tofu

Thank you sooo much!  I just bought tofu for the first time this week and had no idea how to cook it!  now i've got some great ideas. 

Thanks, I also just purchased tofu. I like the baked idea, but I'll skip frying it. I can just imagine how much oil is soaked up.  YIKES

i love tofu. im sure it soaks up a lot of oil, but i absolutely love how it taste when it is fried. fried tofu and a tad bit of sweet chili sauce =] just like mom made it. thats comfort food for me

??? Drain then freeze???? Why?

Um, you don't have to drain tofu to freeze it.  I simply throw the whole package [water packed] into the freezer then thaw and press before using.  Does exactly the same as his method and frankly, it is much easier for me to take the packages from the shopping bag and just toss in.

And I always press on a slant board.  Why? Drainage. 

It makes a royal mess if I do it on a plate and doesn't get as nice.  All I have to do is elevate my chopping block a bit on one end.  Drain the other into the sink.  Place on towels or wrap in cheese cloth [if it wants to crumble] put the weight as shown on top [I like my good heavy cast iron skillet personally] and wait until the water stops.
