How can I feed my sports family on the road 5-6 nights a week?

Mom is competetive fastball player, 14 year old son is a rep hockey player, dad is a coach of a different rep hockey team and 20 month old baby Riley is in tow. We all go different directions.  I am looking for quick, easy, healthly dinner ideas for the car or precooked, packaged from the night before.

Every supper is a picnic and that takes organization.  A tote must live in your car packed with plastic utensils, paper plates and bowls, napkins, seasonings and condiments, serving spoon, kitchen knife, ladle, zip lock bags, trash bags, paper towels and moist towelettes.  Your meals must be portable and so you need storage containers and thermos food jars and bottles.  For a balanced meal, you need a variety of sandwiches topped with a vegetable, such as roasted red peppers, avocado, salsa, sprouts, or lettuce.  Serve cherry tomatoes, baby carrots, sugar snap peas, etc. with substantial dips like hummus and guacamole.  Bring crock-pot meals, full-meal salads, quick breads and muffins, and a melon, water and juice.  It is always better to eat the food that you prepare for yourself.
