How much fiber do you get?
So if I'm getting atleast 20mg of iron and 1300mg of calcium a day, will my high fiber diet hinder the absorption of these vitamins?
It seems like all of the vegetarian sources of iron are high in fiber: beans, lentils, oatmeal, peas...
Is this a problem? I just want to make sure I'm doing this right... :)
It's not actually true that increased fiber will hamper the absorption of nutrients. The Oxford-Cornell-China Project actually tested this. They found that as fiber consumption increased the absorption of iron actually increased.
You can file the idea that nutrients aren't absorbed when you eat a high fiber diet as an old wives tale.
I'm also on the 50-75g boat... but that's just the product of a well balanced diet of whole foods and minimal processed crap. I think most veg*ans that aren't junk food veg*ans are the same.

I get 50-70g a day even as an omnivore. Oddly enough, on days when I get significantly more or less than that, I do feel different.
I wouldn't worry about vitamin and mineral absorption.
I'm with dm84 -- I average 55-70g as an omnivore and the last two days when I had significantly less, I feel icky.
