hi guys. i am considering an attempt at making my own homemade pizza to kill those cravings i get ALL the time. (ya know, the ones where you eat half the pie...) however, i'm not sure how to make a low calorie crust. i know that you can use bisquick, and the reduced fat kind isnt too bad. but i figured id throw this out there to see if anyone had any good ideas for crust or even the pizza as a whole. thanks everyone!

Have you ever made a simple yeast dough?  It's just flour, water, yeast and salt.  The trick is rolling or patting it out really thin.

Any French bread recipe will work to give you the proportions.  If the recipe calls for oil or butter, then it's not French bread.

I do a single rise for pizza dough - let it rise, punch it down and form the crust, topping it and baking it at high heat (450 to 500 f), without letting it rise again.  Letting the dough rest before rolling it out makes it easier.

You can freeze rounds of dough!

I make my own pizza, the key is the simple yeast dough like clair said.  I make mine using the poolish methiod.  You add half the flour, all the yeast and water stir and let it sit covered for an hour to 6 hours and then add the remaining flour.  Then I let it raise for 15 to 30 munites, knee it some and then roll it out thin.

You may have to let it rest to get it really thin.  And I always prre-back it with no topping or sauce to get it crisp.  1 cup of flour (about a third to half cup of water) will make a thin 13 inch pizza crust.
Something I've tried recently and really liked was using low-cal wraps (Flat Out was the brand I found with about 90 calories) and putting the same toppings I would normally get on a pizza inside it with a little bit of pizza sauce and a small bit of cheese. I got the sundried tomato kind and it really satisfied my craving for something that tasted like pizza but only ended up being about 200 calories (I like a very small amount of cheese and a few black olives) per wrap. I had two for dinner one night and was satisified. Hope someone else can enjoy!
