What do I do when the day have finished and feeling full I haven't eaten all my calories?
I was told 1200 calories is the minimum, and in order to start to lose weight again I should increase my intake. Just for an ex. today I have had my 3 meals, have snacked twice and just managed to eat 1000 calories. Can't eat more, it's bed time already!

Try incorporating some healthy but calorie dense food into your day, healthy fats like nuts, nut butters, and olive oil. Don't worry about today if you're really full. Just plan out tomorrow better.
Anything less than 1000 calories and your body will go into starvation mode and you wont loose any weight. Your body will conserve all your body fat because it is afraid it wont continue to get energy (calories). I would slightly increase the amount of calories you are eating with your meals and snacks thoughout the day. That is the great thing about caloriecount, you can keep track as the day goes on. If you see you are behind schedule, eat a few more calories in your next meal. Good luck and give your body those calories it wants.
This used to happen to me, but I realized it's actually harder to lose weight when I don't eat at least 1250 calories a day.
I will have something that's healthy and fattening like nuts (peanuts, cashews, or almonds all have about 180 calories in 1/4 cup=28 grams). They are high in good fat. I try to pace myself so I don't have to eat too late. Another food I enjoy when I have some extra calories is avocado with lunch or dinner, at 250 to 300 calories.

To be honest I think the best thing you can do is planned your day a bit more at the start so that you don't get to the end of the day and have a calorie shortfall, if you pre plan your 3 meals and your snacks then you can make sure that you have eaten 1200 calories by the time you finish dinner.
This is generally what I do when I am in a "no eat" mood and can't be bothered with food, that way I can't get to the end of the day and be under.
Have a martini. Or a slice of halva.
Boom 200 cals.
