Hey, guys! I just created a recipe based on some leftover stuff in my pantry, and came up with this:

edit: They didn't rise enough! My second batch I added some baking soda. We'll see. They're really yummy though. And could also be drop cookies if all else fails.

wow, only 49 calories?? I have a question though: 1/2 cup coconut - coconut what? coconut milk? shredded coconut?
Shredded coconut! :) Adds texture.
What size are these? 25 grams per serving sounds really small to me, but I have nothing but imagination to base that on. Can you send up a picture perhaps?

hope you see this soon, because i really want to try these muffins and i'm going grocery shopping tonight.  I'm not a big baker and i really want to get them right - so i have a few questions:

- how much baking soda did you add to the 2nd batch to make them fluffy?

- are these regular sized muffins or are they mini muffins?

- what do you mean by "softened" bran cereal?  "softened" how?  crushed?  soaked in liquid?  water?  milk? 

- and what kind of bran cereal did you use?

Hi anonita,

When I made these muffins, I added about a tsp of baking soda, and that seemed to work.  Also, it made 12 regular sized muffins, so I assume Lizzle meant 24 mini muffins.  For the bran cereal, I simply added AllBran to the wet mixture and let it sit for a while to soften before I added the rest of the dry ingredients.  I also added some cinnamon, nutmeg and a dash of allspice, plus a tbsp of maple syrup for flavour.
