Flourless Banana Mish-Mash Muffins! Recipe

Makes 24 servings


These low-calorie, low-fat muffins are fun to make and guilt-free to enjoy. Applesauce replaces the traditional oil, and considerably reduces fat! Instead of coconut, you can substitute dried fruit, or finely sliced nuts. I also added cinnamon for some extra zest!

Ingredients
1 1/2 cups rolled oats
1/2 cup wheat bran or softened bran cereal
1/4 teaspoon salt
1/4 cup applesauce
1/4 cup blackstrap molasses
1/4 cup coconut
2 bananas
1 teaspoon vanilla extract
1 tablespoons baking powder
1 egg
Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin tins, or use muffin liners.

  2. In large bowl, combine applesauce, 1 egg, molasses, bananas, and vanilla until smooth. Add cinnamon if desired. Mix in oats, bran cereal, baking powder, and salt. Fold in coconut (or dried fruit, sliced nuts, etc.). Fill muffin liners halfway with batter. Sprinkle with sugar or sugar substitute on top if desired.

  3. Bake for 20 to 25 minutes in the preheated oven, until edges are light brown.
