Fluffy Vegan Pancakes? Do they exist?

I've tried a couple of pancake recipes using ener-g egg replacer, various mixtures of different flours etc.  Does anyone know if there is a mix or a recipe that doesn't turn out gooey in the center?

yes, indeed. my friend morgan makes amazing vegan pancakes. he has had a lot of practice and has worked it down to an art, but employs soy milk, baking powder, and sometimes some fresh fruit (mashed or otherwise) in his efforts. he wisks really hard, and then cooks then on a low heat.

I think it takes a bit of zen, but its totally doable.

 

I don't use a specific recipe, but if you're getting pancakes that are gooey in the middle, you might have the pan too hot.  Gooey centers usually means the outside is cooking so fast that the inside doesn't have time to cook.  Also, any time you make pancakes, make sure you don't stir too much.  Leave some lumps in the batter.  If you stir until the batter is smooth, you'll get pretty tough pancakes.  

Try looking on vegweb.com. That's one of the biggest vegan recipe sites on the web. I know there is one on there called "Whole Wheat Banana Pancakes". I cooked them last year (before I cut out like 90% of everything I ate) and they were so fluffy I thought I had died and gone to Heaven! There are tons of pancake recipes on there, too, so if whole wheat or banana isn't your thing, I'm sure there is something there that is!

Whole Wheat Banana Pancakes

Ingredients (use vegan versions):

    1 very ripe organic banana
    1/2 cup vanilla soy milk
    1/2 cup organic whole wheat flour
    1 tablespoon organic applesauce
    1 tablespoon baking powder
    1/2 tablespoon organic sugar
    1 teaspoon vanilla extract
    pinch of salt
    organic slivered almonds

Directions:

Mash banana in a bowl, then mix in other ingredients until smooth. I find it is best to mix in either the baking powder or the applesauce last as they have a tendency to foam up if added one right after the other.

Spray a non-stick skillet with olive oil spray and preheat to medium. The pan is ready when sprinkled water sizzles on it.  Pour desired amount of batter onto pan and add almonds. Flip when the edges are bubbly and the other side is golden brown. I love to top these with vegan butter and pure vegan maple syrup.

Serves: about 5 pancakes

Preparation time: 10 minute
