Fly Eagles Fly! Snack ideas for the playoff game?
hi everyone!
I know we're excited in my house about this sunday, and we'll probably have a mini party just in case we don't go to Tampa. (william penn save us!) So i was thinking we could some good lower-cal snacks here to get some good ideas! I know there will be beer in the picture- so i want to try to save some calories!
I do an organic (well mostly organic) chili that has been a big hit. I also tried a middle easter red pepper dip with some pita chips.
The Chili...
Ingredients:
Ground turkey or chicken
1 green pepper
1 red pepper
1 red onion
2 cans kidney beans
2 can diced tomatoes
Chili powder
Cayanne Pepper
Red Pepper flakes
1 light beer
Directions:
1. Brown ground turkey or chicken in a medium frying pan. I brown the meat with a little Montreal Steak Seasoning and chili pepper to give it a more "beefy" taste. Drain and add to crock pot, or large pot.
2. Add beans and tomatoes to pot.
3. Chop peppers and onions into very small pieces and add to pot.
4. Add 1 bottle of light beer. (I use heinekin light or Yngling Light.)
5. Add chili pepper, cyan pepper, and red pepper to taste (depending on how spicy you want it)
Here is the recipe for the Syrian Pepper dip called "Muhammara"
Ingredients...
- a 7-ounce jar roasted red peppers, drained
- 2/3 cup fine fresh bread crumbs
- 1/3 cup walnuts, toasted lightly and chopped fine
- 2 to 4 garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
- 1 tablespoon fresh lemon juice, or to taste
- 1 teaspoon ground cumin
- 1/2 teaspoon dried hot red pepper flakes
- 3/4 cup extra-virgin olive oil
- toasted pita triangles as an accompaniment
Directions...
In a food processor blend together the peppers, the bread crumbs, the walnuts, the garlic, the lemon juice, the cumin, the red pepper flakes, and salt to taste until the mixture is smooth and with the motor running add the oil gradually. Transfer the muhammara to a bowl and serve it at room temperature with the pita triangles.
