So much food - is this realistically 300 cals??
I'm getting ready to make / log dinner and this doesn't seem to add up:
- 16, 31/40 count shrimp (110 cals)
- 1 cup eggplant, diced and 1 cup zuchinni, diced (40 cals)
- 6 cherry tomatoes, 6 mushrooms (50 cals)
- Marinade (1/2 tbsp olive oil, 1 tbsp balsamic, lemon juice and fresh herbs - see my recipe - 90 cals)
I'm going to put it all on skewers, marinate, and grill.
This totals ~ 300 calories but seems like a pretty freakin' full plate to me.
Can someone confirm I'm not crazy?
I don't think it sounds that far from 300. You're getting a lot of volume from the veggies, so that makes it seem like lots of food. Enjoy!

4 large shrimp weighing 22 grams, are 22 calories. A half a tablespoon of olive oil is 61 calories. The other ingredients are all low calorie.
so, yes, it really is only 300 calories! You've discovered the secret to never feeling hungry!

Now that's an excellent, healthy meal! I haven't thought about kabobs and am always interested in new ideas to keep away boredom. I tend to eat the same things over and over. That would work with chicken, too.
I've been doing kabobs here lately. Alternating red bell peppers (30 cal for 1 cup sliced), onions (45 for 1 cup sliced) mushrooms (20 cal for 1 cup whole), and some cubed eye-round steak (3 oz = 143 cal) [1/2 pound for $1.80 and delicious] and a bit of oil 1-2 tsp (so 40-80 cal).
Wonderful meal for 318 calories.

ps. and yes, your calories look right to me! Shrimp is pretty low-cal, as far as meats go!
Sometimes I put in a recipe and the calorie totals don't look quite right to me as well. Then I am overcome with guilt because I "know" it had to be more calories than that. When that happens I double a serving of something, even if I didn't have two. I go to bed with a clear conscience, and I still generally stay at the right intake zone.
