Here's my very fave soup.  Just did an analysis on it and it comes up an "A" so thought I'd share.

1 medium onion, chopped
2 garlic cloves, minced
2 teaspoons olive or canola oil
3 cups reduced-sodium beef broth or vegetable broth
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes
1-1/2 cups picante sauce
1 small green pepper, chopped
2 teaspoons chili powder
1 teaspoon ground cumin


In a large saucepan, saute onion and garlic in oil until tender. Add the
broth, beans, tomatoes, picante sauce, green pepper and seasonings.  Bring to a boil, stirring frequently. Reduce heat; cover and simmer for
10-12 minutes, stirring occasionally.

You can serve with cheese and sour cream

Can I find miso paste in my local grocery? I have had it before and like it--just wouldn't have thought to make my own at home!

This is why I love my crockpot too---is there anything better than throwing a bunch of stuff in, going about your day with no worries, and the coming home to dinner that night plus about a million freezable and reheatable lunches or dinners? ( :

My fave lately = 40 calories or so a cup

1 can chicken stock
1-2 large cans of petite diced tomatoes
8 oz of tomato juice or V8 if I have it open and on hand...
1 head cabbage (the best filling "filler" ever!)
as much broccoli, cauliflower, celery as I want
a cup or so of peas
1 small potato (= one cup I recently measured)
a cup or so baby carrots cut in 1/2 or 1/3's
water to fill crockpot
I season with whatever strikes my fancy-Cajun spicy one, Italian herbs the next.

I think a big bowl of low cal soup and an openfaced sandwich or a huge salad is maybe my favorite summer meal ever!

(And I find it very pridefully satisfying to know **I** made this awesome soup! New to this whole proud of what I cook era vs. being guilty about what I was putting in my mouth----forgive me!)
