Bread crumb alternative!

I used to love making roasted chicken cutlets with bread crumbs, that is until i checked out the nutritional panel and saw that it was loaded with high fructose corn syrup and hydrogenated oils (transfats!). I found a great and much more healthy alternative, Japanese panko bread flakes. Panko is usually used in japanese cooking to make tempura, but its great for baking too! Not only is it alot less in calories and salt, but it also isn't filled with all those transfats!! I tried using them for the first time yesterday and it turned out great. All I did was wet my piece of chicken in 1% milk, roll and pound it in the panko flakes (I added some oregano flakes to the panko as well), lay it on a pan with a spray of nonstick canola spray and throw it in the oven! and presto! it tasted great! I really recommend it to anyone who loves using bread crumbs. cheers!

p.s. You can find panko flakes in the international food section of your grocery store!
