I'm picking up a rotisserie chicken breast on my way home from work today.  Going to steam some veggies and cut up a watermelon to go with it.  I will probably throw a few multigrain rolls in the oven for my husband...maybe I'll sneak one!

well it's super hot where i'm living so i'm keeping my stove/over off and having a salad and a lean cuisine! but i do plan to add some chopped up frozen cauliflower to the lean cuisine to bulk it up a little!

then cherries for dessert and maybe an icee pop or two :P

Banana Nut Cheerios with a sliced banana! Sometimes its fun to have breakfast for dinner.. Not too bad caloriewise either with skim milk. =]

a bean/corn salad

1 cup of red kidney beans

corn on the cob--with the corn cut off the cob

1 cup of romaine lettuce

1/2 cup of fresh salsa

Mix all together and you have  fresh salad

tacos with lean ground beef, lettuce, tomatos, salsa, cheese, tortillas, low-cal sour cream yummmmmmyyyyy and can keep it under 500 cals!

2 lowfat nutrigrain eggo's w/ 1/4 c sugar free syrup, 1 egg/2 egg whites, and a skinny cow ice cream sandwich!

:)

bbq pork loin chop with a spoon of apple chutney, mashed cauliflower/potatoes with roasted garlic and herbs, and greek salad dressed with lemon juice.

Or, jalepeno-bison burger on multigrain bun with the greek salad, whichever I am in the mood to make!

At my house, we're having a chef salad with 1/2 iceberg & 1/2 romaine with assorted veggies, boiled egg and diced turkey and ham (not to much). All together even with the dressing, it comes to about 450-500 calories. We usually have a big salad at least once a week.

Well, I WAS going to treat the kids and go to McDonald's (I know.  Boo.  Hiss.)so they could play, since they helped me clean house today and we will have house guests in a few days.  But hubby called to say he was going out after work with some business guests from Japan, SOOOO.

I think I will have a chef salad.  That sounds good.  Thank you dnsmills.

I am having a big salad as well: Preparing a serving of the corn, tomato and red pepper salsa recipe that was featured not too long ago on this site (I've added chili powder, cumin & paprika to the recipe), then steaming a 4 oz Mahi Mahi filet and eating it all on top of a bed of romaine lettuce with cucumber & sliced fennel.

Delicious!

I'm having apples and cinnamon oatmeal with some frozen apple slices. :)

Im having a bannana a ganoala bar some brocoli and carrots 3 peanut butter crackers and 8 pretzles.

Middle Eastern Chicken Kabobs

tons of assorted veges

whole wheat tandoori naan

quick, easy, yummy!

Turkey sandwich w/lettuce

salad w/ italian dressing

2 zucchini muffins

I'm preparing an omelet with salsa, a salad and a few olives.

Leftover grilled boneless skinless chicken thigh seasoned with a Latin rub.  2 corn tortillas.  L1/2 home cooked leftover pinto beans w/ Mexican seasoning.  Homemade salsa with local tomatoes and peppers.  Grillled home grown zucchini.  The only work I have to do tonight is make the salsa, my husband will grill the zucchini.  I love leftovers!

do you make your own Latin rub? If so, share!

I had this on hand some time ago from a Flank Steak recipe, but use it more often on chicken now.  It comes from Cook's Illustrated.  I bump up the red pepper flakes, or sometimes add some chipotle powder for some more heat.  This makes lots, so I sometimes just mix up a half recipe.

2 tablespoons ground cumin 2 tablespoons chili powder 1 tablespoon ground coriander 1 tablespoon kosher salt (or 1 1/2 teaspoons table salt) 2 teaspoons ground black pepper 1/2 teaspoon ground cinnamon 1/2 teaspoon red pepper flakes

this sounds fantastic! I'll add some chipotle chili powder with the ancho and that should bump up the heat too. I would never have guessed the cinnamon!

many thanks!

I was bad...I was craving a grilled cheese for the past month or so .  I made a grilled cheese on wheat bread with tomato and bacon. it was worth every calorie :)
