But not overly processed ones, so no need for the bun.
Anyway, I don't know what's in the veggie patty (other than veggies, obviously), so I can't say anything about that one. The rest sounds fine.

That sounds like a good, balanced meal to me. And it does include carbohydrates, contrary to the suggestion above.
That is completely good!
It contains healthy fats, some carbs, some proteins, and some veggies. And, it is a sufficient amount of calories. (The lack of bun is fine if you actually did have a carby breakfast similar in cals - fluidity in diets makes sense. )
It might be higher fat than some other meals, but that doesn't make it unhealthy.
And as for the fruit suggestion: add some as snacks or with snacks if you don't want them with lunch. But, really, your meal is fine.
