Need Help - Slappy? Anyone?

I've been on such a kick with portabello mushrooms.  I bought a couple of big caps, and some crab - I was going to stuff them and then throw them in the oven.  So here's the question - do I *have* to mix the crab with anything or can I just use it plain and then top it with some fat-free cheese?  How long to bake/broil a portabello stuffed with crab?

Sorry, I can't help. Not a mushroom fan myself. But I just figured I'd post so your topic didn't fall off the recent list.

that has some framework stuff to work around... don't make the bechamel, your recipe sounds good, but you WILL want to mix teh crab with something, even if it's just a little fat-free mayo, as plain crab for some reason bakes gross and teh mushrooms will be better for a little oil in them.
Cheatingirl - here is what I do with my mushroom caps.  My daughter who dislikes mushrooms request these all the time.

Stuffed  Mushroom

Two Portabello Mushroom Caps

One Can Crab Meat

2 med scallion stalks (chopped)

1/4 cup bread crumbs

chicken (or veggie) broth

Low fat cheese (your favorite)

In a bowl mix the scallion, bread crumbs, crab meat and cheese.  Moisten with chicken broth until it all sticks together.  Place filling into hulled out mushroom cap.  Sprinkle with cheese.  Bake in 350 degree oven until cheese melts on top and mushroom is cooked (about 15 mintues, but varys depending on size of caps).

I promise this is awesome!  I am at work so I don't have the calorie breakdown but it varys depending on your cheese use.  You can also play with the ingredients.  I have added rosemary and/or dijon mustard at times. 
yum!  This is one of my favorites.  I use crab and then mix in a bit of lite sour cream, some dijon mustard, a splash of either balsamic or seasoned rice vinegar, bread crumbs, chopped onion and maybe a bit of parmesan cheese. I bake these at 375 for about 20 minutes, but it does depend on the size of the mushrooms.

I would try one with just the mushroom and crabmeat.  see how one turns out?
slappy- can you mush up cornflakes or rice krispies to sub for crumbs?  I mean, yes, that works, but I forgot your specific allergy cause I'm a bad friend, I was thinking it was some grains but I forget which.
Slappy can you have pork rinds?  When doing low carb they suggest grinding pork rinds to use in place of bread crumbs.  The consistency works just the same as bread crumbs.

You would buy the low fat ones, if you can find them.  You don't even taste them when you grind them up.  Also they are high in Protien.  You would use very little in my mushroom recipe as they are only used to make hte mixture sticky.

Mayonnaise is the thing that really helps crab in crab cakes, so it should work for your stuffed mushrooms.  Hint - don't use fat free mayo, use the "light" mayo.  You need a little fat to get it sizzling.  You don't need much, just enough to moisten.

Here's my crabcake recipe

Makes 12 small crab cakes or 6 large

1 pound lump crab meat, picked over
1/2 cup light mayonaise
1 cup fresh white bread crumbs (I use day old Italian bread, no crusts, chopped up in the food processor)
1/2 cup each minced onion, minced red and green bell peppers, minced celery (I do this in the food processor)
1/4 cup finely minced fresh parsley
1 TBS (or to taste) Old Bay Seasoning
Juice of a lemon

Mix well, make patties and saute on both sides, or bake.  This is a loose mixture that does not form a solid cake, so turn carefully.  Great for stuffing vegetables!!!
I think the main question was "Can she cook it with just the mushrooms and crab, without adding anything else.
...and how long to cook it.

So my answer is/was... about 10 minutes, and I think you need to add some sort of oil or fat to the crab besides the cheese.
