I need more carbs! Best options?

Shockingly, i've been needing more carbs lately. Besides bread (Which I am really trying to avoid) What are some other options? The more unique or different,the better!!!! I like a lot of variety.

Quinoa, blue potatoes, yams-the asian kind, parsnips, plantains, gnocchi, wild rice

Yams, squash, bananas, pineappple and other tropical fruit.

vegetables, fruits, nuts, seeds,.. and the occasional sweet potato. 

Oatmeal, brown rice.  I love whole-grain Cream of Wheat, too.  I eat it for a snack if I want something hot and starchy.  Not ideal, I guess, but better than a lot of things.

Root vegetables, like white or sweet potatoes (ideal roasted with olive oil, yum!) and carrots of course

Beets

Corn...and no, corn isn't evil. Come on, people! It comes from the earth! 

Apples, bananas, and mangoes

kasha (roasted buckwheat groat) porridge. tastes nutty and savory and is super quick-- 10 minutes to cook!

since you want something different, try putting bananas with another kind of fruit, or maybe a little chocolate. different, and yummy, or even frozen bananas.

Thank you all. Anyone know if baking plaintains ends up as good as fried ones?

I also never thought of carrots as being carbs haha.

Beans.  Might as well get fiber and protein along with your carbs.

All values are for 1 cup (about 170 g) of cooked beans

  • Black Beans = 230 calories, 15 g protein, 41 g carb, 15 g fiber
  • Pinto Beans = 245 calories, 15 g protein, 45 g carb, 15 g fiber
  • Kidney Beans = 220 calories, 13 g protein, 40 g carb, 16 g fiber

 

Edit: I have baked plantains before.  Mashed slightly down, dusted with brown sugar, cinnamon, and cardamom or vanilla (your preference).  Roasted on lower heat until browned and caramelized.  They are delicious.  A little honey drizzle on the serving plate and it looks super classy too Wink
