Hi, does anyone know what i can do with quinoa?? Thanks!

oh my my!  I love quinoa...somewhere in the archives of recipes are several I posted on quinoa...check them out...if they aren't still there I'll repost!!!

Quinoa Pilaf

1/4 tsp saffron threads
2 c hot veg or chicken stock
1 small onion, minced
1 TBS olive oil
2 garlic cloves, minced
1 tsp toasted cumin seeds
1 c quinoa, rinsed
1/4 c chopped red bell pepper
1/4 c chopped green bell pepper
1 bay leaf
salt and pepper to taste

Steep the saffron in the hot vegetable stock in a bowl
for 10 min.  Cook the onion in the olive oil in a
saucepan over med heat until softened.  Add the garlic
and cumin seeds.  Cook for 1 min. stirring constantly.
Add the broth with the saffron, quinoa, peppers, bay
leaf and salt and pepper.  Bring to a boil.  Reduce
heat and simmer covered until quinoa is tender.
Remove the bay leaf.  Serve with grilled shrimp or
chicken. 
Serves 6
Here is my all time favorite recipe for quinoa...

Quinoa Corn Salad

Dressing:

3 TBS fresh lemon juice

2 TBS olive oil

2 TBS fresh cilantro

2 stalks scallions chopped

1 tsp minced garlic

1 tsp cumin

1/4 C quinoa (rinsed under water)

1/2 C broth (chicken or veg)

1 can black beans rinsed and drained

1 tomato seeded and diced

1 C fresh or frozen corn (3 ears if fresh)

1.)  Cook quinoa in broth for 12-15 min

2.)  while grain cooks mix dressing ingredients in a large bowl

3.) Add drained and rinsed beans, tomato, and corn

4.)Cool grain to room temp.  Then mix with other ingred.  Chill until ready to eat.

Rinsing the quinoa removes any trace of saponin, bitter coating found naturally on quinoa.
quinoa is awesome! 

those recipes sound good!   I love throwing broc and some lemon juice on it.  oro cucumbers and tomatoes...

anyway I would fix couscous or rice

I promised quinoa recipes to salome at least 2 weeks ago, maybe longer... sorry salome!  But here ya go!

Apple-Walnut Quinoa*

  • 1 cup quinoa, thorough rinsed and drained
  • 3 cups plain milk (or soy or almond milk)
  • 1/4 teaspoon ground cinnamon
  • Pinch sea salt (optional)
  • 1 large apple, skin on, cored and diced
  • 1/2 cup chopped walnuts
Place the quinoa, milk, cinnamon, salt (if using) and apple in a medium saucepan. Bring to a boil, stirring frequently. Cover pan and reduce heat to low. Simmer for 20 to 30 minutes or until quinoa is soft. Top with chopped walnuts.

*can also use amaranth in place of quinoa - quinoa is more like oatmeal; amaranth is more like grits

Serves 4.

Tip - leftovers microwave nicely.
Peach Quinoa with Flax & Nuts

  • 1 cup quinoa, thoroughly rinsed and drained
  • 2 cups skim milk (or soy or almond milk)
  • 1/4 teaspoon ground allspice
  • Pinch sea salt (optional)
  • 2 medium peaches, peeled,pitted and diced (or 1 1/2 cups frozen peaches)
  • 2 tablespoons flaxseeds, ground
  • 2 tablespoons chopped walnuts (or pecans)
Place the quinoa, milk, allspice, salt and peaches in a medium saucepan. Bring to a low boil, stirring frequently. Cover pan and simmer on low heat for approximately 20-30 minutes until quinoa is tender. Top with ground flaxseed and chopped nuts.

Serves 4.
Quinoa is the BEST! I got seriously addicted to that stuff last winter. What I ususally do is cook it as you would rice, but sauteeing some onion and garlic first in the pot you will use to cook the stuff, and then adding the water and quinoa and whatever herbs you like (I'm a big fan of black pepper and thyme). Meanwhile, I roast some veggies in the oven, usually red onion, red peppes, broccoli, zucchini, until they're nice and browned. Once the quinoa is ready, I toss it with the veggies and some low-fat feta or parmesan cheese..... FABULOUS!
I thought I had some more quinoa recipes, but the other ones are for brown rice, buckwheat groats and the like....
If one uses the recipes above, does one not feel as if one is eating birdseed anymore? :-)
I love quinoa, but a silly question: how do you pronounce it? LOL

I made it for the first time last week. I think some how I used too much salt.... didnt like it. I'm going to try nomo's Peach quinoa with flax and nuts to go along with my salmon tonight.... Hopefully the second time around is a winner.

i have that for breakfast, but wow! you're right - maybe it would be a good side dish! You could add some ginger and some orange and red bell pepper dice to it to make it more savory.  You might also lessen the amount of peaches because it's nice and sweet with 1/ 1/2 cups...
