I've been in LOVE with sweet potatoes! I've been searching all sorts of ways to cook with them. One of my favorite blogs, Gliding Calm, has this really simple yet amazing way to prepare sweet potato fries. You just cut them up into little discs and throw them in the oven at 400 for 20 minutes and you got yourself some healthier french fries!
Anyways! I know that these babies are low glycemic, unlike their brothers and sisters, regular potatos. Normal white potatos are not supposed to be eaten everyday because of their high starchiness blah blah blah, but what about sweet potatoes? Is there anything wrong with making some wonderful french fries a few days in a row?
It's 54 - that's listed as low GL. Why didn't you just look it up as I did?

Sweet potatos are one of the healthiest vegetables, it's fine to eat them every day (in moderation of course)

The only problem I can see with eating something every day, is you could get really tired of that food.
Moderation in everything is the key. And do use the search engine to look up your foods!
I like to partially bake them in the microwave for 4-5 minutes, cut into 1/4 inch slices (coins), spray with cooking spray and finish them off in my George. That way I don't have to use all the electricity that an oven generates.
Thanks for the help guys. I did comment that I already knew about it being low glycemic. Just didn't know if that justified it being ok to eat everyday.
