I've been in LOVE with sweet potatoes! I've been searching all sorts of ways to cook with them. One of my favorite blogs, Gliding Calm, has this really simple yet amazing way to prepare sweet potato fries. I like to partially bake them in the microwave for 4-5 minutes, cut into 1/4 inch slices (coins), spray with cooking spray and finish them off in my George. That way I don't have to use all the electricity that an oven generates.
Thanks for the help guys. I did comment that I already knew about it being low glycemic. Just didn't know if that justified it being ok to eat everyday.
The side effects of allergy medications keep some people from using them. Natural remedies can be a great alternative, but some are more effective than others.
