I thought maybe I could start a chain where everyone would give their dinner menu for the day! It would be great for those who are stumped as to what to have themselves. Plus it also gives us an opportunity to share what we each love to eat! We all tend to fall into the same weekly ruts - it would be lots of fun to swap ideas and try new things! Happy sharing!!!

This week I'm having chipotle sweet potato & chickpea chili for dinner. And I've been switching it up for lunch...yesterday I had lentil veggie soup, and today I'm having chicken florentine (it's a late lunch).
Heh, aubergine=eggplant, so you probably do know it.
Cloudberries are tart orange berries (they look sorta like blackberries) that are picked from marshes in/near the Arctic. They're currently in season, and so good!
Chickpea chili sounds really good too..

ibie - your dinner menu sounds very very good. I am definitely interested in trying that out. As for cloudberries - I have never heard of or seen them but sound worth looking into.

apple-tomato sauce - that's a new one! how do you make that?
Nothing fancy! I just sauteed a chopped apple with chopped carrot and bell pepper until tender, then added a large can of crushed tomatoes with basil. You don't taste "apple" per se, but it is unique (and more nutritious than jarred spaghetti sauce)!
That sounds very easy and delicious! I will definitely try that soon.
Eating a ton of different stuff - Halibut Cheeks, Turbot, Arctic Char & Sable Fish with some spaghetti squash and spinach and a mish-mash of stir fried veggies such as cabbage and leeks! Man, I cannot wait to eat, I am HUNGRRRY!
I had leftover bison chili & gluten free cornbread. I wrote about it in my journal (Monday) with a few other dinner ideas in today's entry.
Couscous mixed with grilled chicken, kidney beans, chick peas, broccoli, snap peas. I put Tabasco green pepper sauce on top. So yummy.

Japanese udon noodles with homemade boiled pork in pork broth:) lots of sodium tonight! Might have some stir-fried spinach too from the looks of the fridge;P
EDIT: we had stir fried bok choy too! And red currant puffs for dessert

Maybe macaroni and tomatoes with a salad. That is quick and easy :)
White rice with a shrimp and veggie stir fry (soy sauce, garlic, vegetable oil...)
Grilled trout fillet, with mashed garlic cauliflower and roasted sweet potato cubes (white and orange) with a glass of coconut milk. Great meal.
Wholemeal pita wrap, tomato paste base with spinach, sliced tomatoes, mushrooms and capsicum, sprinkled feta cheese and a couple of grams of light mozzarella :D
