I LOVE pizza but am trying to lose the lbs so I thought I'd try something new and see how it went and it was delicious so I'm going to share...
Take about 20-25 Grape tomatoes and cut into halves laying the inside up on a pan, then sprinkle with garlic salt ( I used a garlic and sea salt grinder by Mccormick) broil in the oven until they start to bubble, then add a little bit of mozzarella and cheddar cheese on top and broil again until bubbly. It's super delicious and satisfies my pizza craving with none of the carbs. It is about 120 calories, how can you beat that?????

More of a pie base than pizza dough, the Golden Vegetable Crust recipe was originally found in the Enchanted Broccoli Forrest recipe book years ago. The original recipe had a lot more fat. This works quite well & is lighter than the original. It's important to squeeze the zucchini - especially as the cheese layer is much reduced. You could just do the base, add the cheese then the topping for a more pizza-like creation.
2 packed cups coarsely grated yellow summer squash (I use zucchini)
1/2 packed cup coarsely grated carrot (I use carrot )
1/2 cup coarsely peeled & grated parsnip
1/2 tsp. salt
2 tsp. olive oil
1/3 cup plain flour
sprinkle of poppy seeds optional
Lightly salt grated squash or zucchini & let stand in a colander for 10
min. Squeeze out all excess moisture. Combine all ingredients. Mix well. Transfer to a lightly oiled 9 inch pie dish. Use your fingers to form a crust. Bake for 40 min @ 275 F [135 C] then add cheese crust...
Place some grated cheese on top of the crust before adding the filling. This creates a moisture resistant barrier that prevents a soggy crust . You can also add 2 -3 tbs. of poppy seeds with the cheese & flour....then add filling...
I never make this the same way twice usually with leftovers..combinations like...
Spinach, sauteed onion, bacon, nutmeg or
Mushroom, chicken, spring onions, herbs or
Fresh asparagus, capsicum, herbs or
Tomato slices, basil, dill ...then add 'custard'...
Beat 3 eggs & 1 cup skim milk. Pour over the top. Can use buttermilk
instead. Dust with paprika if you like. Bake 35 - 40 min @ 375 F. [200 C]

I make my pizza on a whole wheat tortilla. I toast the tortilla in the oven/broiler. And then add 1/4th cup of organic tomato/pasta sauce and a 4th cup of fat free mozzarella and broccoli and mushrooms. I put the cheese on first, so the crust won't get soggy.
But when it is late and I've already had my carbs for the day AND I'm craving something Italian - I take half cooked string beans, cooked chicken, pasta sauce, and fat free mozzarella... You can either bake this or pop it in the microwave - there you go, guilt free chicken parmesian!
Stop it! You're making me hungry!! LOL Thanks for a great idea. My hubby can have the real stuff while i get healthy and slimmer.
