Does anyone have any ideas? I have six plain ole' seitan cutlets (made from Veganomican recipe) and I'm trying to think of some creative ideas in which to use them. I'm thinking about marinating one and grilling it, and using one as a base for seitan piccata (Veg Times restaurant recipe), but that still leaves me with four more. Last time I made seitan, I used it as "lunch meat", which also worked out quite nicely, but what do you guys like to do with it?

Wow, you make your own seitan?  I always heard it was really hard to do, so I just buy it at the Co-Op.  But it only comes in small pieces.  I often find myself wanting a cutlet version.  Maybe you could do "Veal" Parm?  What about breading it like chicken or fish and serving with a sauce?  Maybe these are kinda boring... what about "Pork" Escabeche?  I followed this Escabeche recipe from Mark Bittman the other day and used tempeh instead of pork.  It was delicious.  http://bitten.blogs.nytimes.com/2008/06/24/re cipe-of-the-day-grilled-pork-escabeche/

Well I just checked out the PPK recipe you used for your seitan and I'm sold.  Gonna try it out tonight!

cut it up and put it on top of bran crispbread crackers, in shirataki or seaweed noodles, etc.

Setian kabobs with cherry tomatoes, zucchini, and mushrooms rock my world.  

veganomicon - so good.  Since you already have the book, why don't you use one of their recipies for seitan.  I have made a couple of them and they were delicous (one where the seitan was fried - but it was worth it!).
