Egg-free cake recipes

Quote  |  Reply

Hi there

It is my little brothers birthday in about six weeks and he is allergic to lots of things, so I'm planning on making him a cake. He's never tried cake before so I want it to be really nice!  Anyway, I can find replacements for most of the things he is allergic to, except eggs.  I've seen loads of recipe's with egg-replacements that can be bought in America, but I live in the UK and I haven't been able to source any here, so I'm looking for either totally egg-free (and nut free!!!) recipes, or advice on buying egg alternatives in the UK.

Even a recipe for a really simple sponge would be fine, it doesn't need to be anything really fancy.

Thanks in advance!!

Any vegan cake recipes would not use eggs and would have egg replacer instead.  If you don't have access to the name brand egg replacer, you could use one of these possibilities:

• 1 egg = 2 Tbsp. potato starch
• 1 egg = 1/4 cup mashed potatoes
• 1 egg = 1/4 cup canned pumpkin or squash
• 1 egg = 1/4 cup puréed prunes
• 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
• 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water
• 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again

I'm sure each one would have a different effect on the recipe, and unfortunately, I'm not sure exactly what the differences are, so you might have to experiment a bit.
I made these once and they were AMAZING. obviously if they are for your little brother ( am am assuming he is really little) you cant make the frosting with the bailys but you can use coco powder instead.

Omg, never mind my little brother, I'm going to be making the guinness cupcakes all of the time!!!! Guinness is my fave drink!!!

And kittybig, thanks for the suggestions, it hadn't really occurred to me to look at vegan recipes because they so often use nuts etc, but all of these ideas are really helpful. I'll have to bake a big batch of miniature victoria sponges to see which alternatives I like best!

Replies much appreciated!

My son is allergic to eggs too and the best substitute I found was that for each egg called for in a recipe use 1 tablespoon of ground flaxseed to 2 tablespoons of water. Heat over low heat until slightly thickened. It works beautifully in all kinds of recipes, and I have used it dozens of times for making cakes and brownies for my little guy. You can even let other people eat it, they will never notice the difference.
I always use the 1 tbs ground flax to 3 tbs water thing that kittybig mentioned. I mix them up and let it set until the mixture becomes pretty thick (you can't dump it out, and its sticky).

works like a charm and its healthy too.

good luck.

Thanks for the suggestions!  I'm not sure about flax seed - eggs are just one of his many (very serious) allergies, which include sunflower oil, all nuts, grass etc. He hasn't had flaxseed before so I can't risk it for his birthday :(
