I've been keeping a 500-600 calorie deficit 5 days a week, and then undoing it with overindulging on the week-ends. I know that if I maintained that deficit 7 days a week, I'd see results, but I haven't been.

Nevertheless, I've "recommitted" myself to losing weight and not throwing my week-ends, and am trying a 1,000 calorie deficit/day. 

My question is: is that too large a deficit? Should I stay with a bit smaller one?

If I tried a 1,000 calorie a day deficit I would blow it on the weekends for sure. Maybe try less of a deficit so you aren't as likely to blow it for awhile. Once you have the habit of eating well 7 days a week, then maybe increase the deficit more.

I guess it depends on you.  I started right away with 1000 calorie deficit and I've had no problems with it, despite the fact that I used to struggle with cravings constantly.  But, it's different for everyone.  At least if you can maintain that during the week, you can still splurge a bit on the weekend and go to a 500 caolorie deficit those days - keeping you at a deficit, but still being able to treat yourself.
