When I go grocery shopping on Friday I'm buying tofu. I've never eaten it and have no idea how to prepare it.
So I need some recipes with Tofu. Nothing gourmet please. I want quick recipes on what to do with it.

I usually just mix it with olive oil and spices. However, I'm pretty much used to the taste nowww so yeah you might want to try something different
Try making a stir fry with soy/teriyaki sauce and a bunch of veggies. you won't even notice the taste
Also, this might sound a little strange, but I like getting silken tofu and mixing it in with my smoothies or sweet treats. Delish, and extra protein!

If you freeze firm tofu it takes on the texture of burger when cooked, good for chili or sloppy joes.
lately, I've been spraying a frying pan with some non-stick spray, sprinkling on cumin and coriander, turning up the stove to medium-high, and cutting the tofu into little rectangles. Then dumping in some sugar snap peas and some broccoli. Maybe sprinkle on more of the spices. Wait for a while until the tofu is slightly browned, the sort of mix it up, then, when i get bored of waiting any more, i announce it "done!" and eat up. yummm ;)
Hi, my measures are approximate,sorrry:) I get extra firm tofu, cube it and merinate with 1oz.sesame oil, 1/4 cup of soysauce, 2 tbls. fresh grated ginger,( you can also use powdered), spinkle in garlic powder to taste And 1 tblsp. of sugar ( I use raw organic). let it sit about 15-20 minutes. Then stir fry veggies( I use birdseye frozen) in a little sesame oil and add tofu when veggies are tenderThen pour in half the marinade .Oh yeah mix the merinade seperatly first then pour over tofu...YUMMM!This is simple and quick...takes about ten minutes to cube and mix. I hope this helps.You can serve with rice also.
Tofu can be quite good! I don't remember where I found this recipe but have made it several times and really like it.![]()
Tofu Creamed Spinach
1/2 pkg (6oz) extra firm tofu
1/4 c parmesan cheese
1/2 c skim milk(more or less)
16 oz pkg baby spinach(washed)
1 tsp minced garlic(I buy it already minced in a jar)
pam a skillet, add spinach and garlic, let it cook down. (You'll have less than half) meanwhile in blender- add the tofu, parm,and 3/4 of the milk, blend till smooth, add more milk if necessary. Should be smooth and sorta thick, like a milkshake. Add the tofu mix to the skillet and stir well. Heat just till warmed through and serve. Even my husband will eat this!
I usually use the other half of the tofu in a stir-fry with mixed veggies of your choice. Add some kind of stir-fry sauce, either homemade or store bought.
Tofu will pick up the flavor of whatever it is cooked with.

I absolutely love to use tofu in curry. The steps sound kind of complicated, but it's not that hard and the process should only take 30-40 minutes.
1) I use firm tofu, to get the excess water out I wrap the tofu block in a clean dish towel and put something moderately heavy on it and press it for 15 mins.
2) Cut tofu into cubes and marinate in soy sauce for 30 mins. Can do this process days before and keep in fridge.
3) Preheat oven to 350, use olive oil to grease cookie sheet, and bake tofu for ~30 mins, flipping once. I like my tofu baked until it is firm and golden. Otherwise has a tendancy to fall apart in stir fry.
4) While the tofu is baking, I saute any type of veggies until tender. Then stir in a can of coconut milk and a can of prepared curry paste. Let heat through and then at the end throw in the tofu. Serve over rice. Enjoy!
You could easily use any sauce you desire.
To get the firmest texture, it's best to buy extra firm tofu and freeze it as soon as you get it. Say, overnight. Then take it out and let it thaw.
Slice into 1/2" thick slices and place between dish towels or folded paper towels on top of a cookie sheet. Put another cookie sheet on top and put something heavy on top to weight it down as evenly as possible - I use several thick books, but you can also use canned goods or anything else you have that is heavy. Press for about 30 minutes. At that point if you want it even dryer/firmer, change out the towels and press for 30 more minutes. After that it should have a nice firm texture that will stand up to frying without crumbling and falling apart.
You can marinate it (soy sauce is the most common choice, but there are tons of options) and use it in a stir fry or grill it or bake it. One dish I have made is to crumble up the tofu and brown it like you would ground beef, and serve it with rice and veggies.
This is my favorite but my measurements are sort of on the fly:
Tofu Eggplant Casserole
1 med. eggplant
1 package firm or extra firm tofu
16 oz canned tomato sauce (i use the really plain kind- get it from trader joe's)
a casserole or brownie pan
Spray the bottom of your pan.
Peel and slice your eggplant in to thin strips.
Drain and crumble the tofu.
Layer in this order:
tomato sauce
eggplant
tofu
tomato sauce
eggplant
tofu
tomato sauce.
salt/pepper/garlic salt etc.
Bake at 350 (covered with foil) for 20 min. Then peel back a corner and bake for another 5-10 minutes. soooo good.
