im really into my veggies and try to eat them all raw..... but am wondering are some better if cooked?

like brocc and zucchini and things like that ........... thanks :)

I don't think any are better cooked. A potato actually changes food classifications: raw it's a vegetable. Cooked, it's a starch.

 

However, the nutritional difference between raw and cooked isn't all that huge. You should feel like you have to eat them all raw. Cooked is yummy!

Some oxalate vegetables may be better cooked.  Spinach and rhubarb are the high-oxalate veggies you're most likely to run into; lower-oxalate veggies include beet greens, swiss chard, collards, even parsley.  They contain oxalic acid, which inhibits absorption of calcium and iron.  Cooking seems to break down the oxalic acid and help absorption.  Of course, cooking may also break down some of the vitamins and nutrients that make these veggies so good to eat in the first place ... so whether they are actually "better" cooked is probably debatable.

hi,  i have to cook all my veggies because most of them were causing me stomach problems,  i think i can eat cucumbers and tomatos and thats it.  but i now eat alot of baked beats carrots, parsnips and always ate alot of peas cooked and cooked spinich and cooked mushrooms,  any suggestions on other veggies that would be easy on my stomach raw.  thanks

Tomatos and cucumbers? Maybe that's 'cause they're fruits!

Try other cleverly disguised fruits like zucchini, bell pepper, and squash.

Unfortunately cooking most vegetables makes them lose valuable enzymes needed to digest them.  But for me, raw veggies are harder to digest!  I love them both but tend to lightly steam most so they are still crunchy but not raw.

You cook vegetables to get a different flavour out of them.  They're not medicine, they're a foodstuff.  Steamed, roasted, boiled, baked, turned into a soup.... or raw.  It's all good.

 Ha, ha!  My husband HATES when I tell him that, not that it comes up often in normal conversation.

generally cooking does break down some of the nutrients

but if you want to cook them (but preserve as many vitamins as possible), steaming is the way to go (on the stove top, not in the microwave--microwaving leeches out more nutrients)

I have been on a kick lately of steaming green beans with a clove or 2 of garlic and some crushed red pepper.  It tastes pretty similar to the "firecracker green beans" they have at famous dave's but I know exactly what is in mine.  I prefer my vegis steamed.  mmm

Intelligence means knowing that a tomato is a fruit.  Wisdom is knowing that you don't put them in a fruit salad......

It was in response the post pointing out that tomatoes and cucumbers were fruit..

my hubby was just reading a book that was talking about carrots. It said that your body got more vitamins out of cook carrots then raw. something to do with how your body can break them down.... I have not had time to look into it.
